RECIPE: Fennel soup I tried this delicious Italian soup last night and I wanted to share the recipe. It's yummy and really low in carbs.

[color=purple]Zuppa di Finocchi (Fennel soup)
6 fennels
2 onions
50 g olive oil
20 g butter
salt
1 liter vegetable broth/stock
50g grated parmesan cheese[color/] Heat olive oil and butter over medium heat in a high pot. Dice onions. Wash, clean and slice fennel into thin slices. Cook onions for a few minutes in the hot oil until soft. Add fennel and cook for another few minutes. Then add salt and vegetable stock. Simmer for 20 minutes. Blend until smooth or semi-smooth. Pour into plates and top with grated parmesan cheese. ENJOY! Drink with a light dry white wine such as Chardonnay or Pinot Grigio. Goes well with lean fish such as plaice.
