Recipe: Low-carb cinnamon mini-muffins Mama Anne's Kick-Hiney Cinnamon Mini Muffins

1/2 Cup Unsalted Butter, Melted
3 Large Eggs
1 Cup Splenda (granular For Baking, Not Packets.)
2 Tsp Vanilla Extract
1/4 Tsp Almond Extract
dash Salt
2 Tbsp Ground Cinnamon
1 Cup Vital Wheat Gluten Flour (I get this from Bobsredmill.com)
1/2 Cup Quaker Oat Bran Hot Cereal (dry, uncooked)
2 Tsp Baking Powder
2 Tablespoon Almond Meal (Optional. Only adds 2g carb per entire batch)
Preheat oven to 350°
Melt Butter in Pyrex (or similar) mixing bowl in microwave.
Beat-in by hand eggs, splenda, vanilla extract, almond extract, dash
salt.
Add cinnamon.
Add remaining ingredients and mix by hand just until all ingredients
are incorporated.
Spoon into greased (with cooking spray) or nonstick muffin pan. Note
batter is extremely thick. (DO NOT use paper liners.)
Bake in 350°F oven for approximately 30 minutes.
Total carbohydrate count of recipe: 93, of which 15 are fiber. Each
mini muffin: 4g. This can be reduced by 1g each muffin if you use
flaxseed meal instead of the oat bran (the entire reason I developed
this one was to find a way to get just a little bit of oat bran into
my diet). If you use a different size muffin tin, do the math
accordingly. These take butter or cream cheese very well.
