I would like cooked black beans in salad - especially some kind of blackened chicken salad or mexican salad.
DH and I make a taco salad dip that I eat with a few totilla chips (and then the rest with a fork!) that is good with black beans.
If you're into mexican food, I'd be glad to type up the recipe. It's really easy and pretty good, but wouldn't necessarily contain a LOT of black beans, unless you wanted it to.
I'm curious - did your acupuncturist tell you why black beans?
cuban-style black beans are awesome (with or without the rice)
saute 1 chopped onion, 1 chopped bell pepper in olive oil in the bottom of a 2 quart or larger pot until soft.
Add chopped fresh garlic, some chicken broth (maybe 1/2 a cup), oregano, a few bay leaves, and 1 tbs cumin (the cumin is important)- let that simmer so the flavors mix well (maybe 10 min). If the chicken broth boils off you can add more.
Then add two cans of black beans and let cook- at least a half hour. Keep it on low so the bottom doesn't burn. Add salt and pepper to taste. You can also add a little bit of white vinegar to make it more piquant. The longer they cook on low, the thicker the sauce. MMMMMM

In addition to black bean dips, you can also try soups and salads, as well as just adding them to other foods that you regularly eat (Jen's salad idea comes to mind).
I'm not a recipe person for soups (I just usually dump ingredients in), but from your other emails, you sounds adept at altering diets/recipes, so I'd suggest looking some up (or maybe another cycster or two has suggestions).
Salads are my favorite. I usually mix two up a week and eat them with dinner or as an after dinner snack. Two of my favorites are:
t olive oil
T minced or roasted garlic
[mix these two together in a large bowl and then add the rest]
1 can or 1.5 cups cooked black beans
1 cup diced peppers (red, green, whatever you like)
1/2 cup diced onion
1/4 cup minced cilantro (cilantro goes great w/black beans)
or
just the olive oil, garlic, and black beans.
We often alter this based on what veggies we have in the house (plus, dh like to add corn...something I try not to eat; sometimes I add quinuoi, my fav grain). It tastes great, plus it is versatile (as a side dish, dh uses it as a dip for corn chips, it goes great with added meat, etc).

I only found out the other day that black beans are actually fermented soy beans. I always thought they were a variety of beans called black beans.
How about Mexican Black Bean Stew?
8 ounces finely diced chicken breast
1 cup cooked black beans
1/2 cup diced onion
3/4 cup diced zucchini
1 cup tomato puree
1/2 cup salsa
2 2/3 tsp. olive oil, divided
2/3 cup water
Salt and pepper to taste
2 tbls. parsley
In saucepan, heat beans, onion, and zucchini in 2 teaspoons oil until tender, then add tomato puree, water, parsley and salsa. Continue cooking until entire mixture is hot. While the vegetables are cooking, in a saute pan heat 2/3 teaspoon oil and stir-fry chicken until cooked. Add chicken to vegetables and simmer for 5 minutes. Place an equal amount in two soup bowls and serve.

As I type this my newest concoction, black bean chilli, is simmering on the stove and it smells delicious at only 7.1 carbs per 1-1/3 cup serving!!!!!!! I'll let you know how it turns out and then I'll post my recipe.
Here's the ingredients:
2 cans (15 ounces each) black beans (drained and rinsed)
3 tablespoons olive oil (I use extra virgin)
3 tablespoons butter
1/2 cup chopped onion (I used onion powder)
2 pounds lean ground beef
3 tablespoons chili powder (or to taste)
salt to taste
pepper to taste
14-1/2 ounces canned tomatoes, diced with liquid
4 tablespoons tomato paste (I used sauce)
3-1/2" cups stock or broth
Put the soybeans in the pot you'll be cooking the chili in. In a skillet heat about 1/3 of the butter and olive oil. When the butter foams (don't let it brown) add in the onion and saute until lightly browned. Add this mixture to the beans. Keeping the skillet hot add the remaining fats and cook the beef until lightly browned, then add the chili powder, salt and pepper and cook for 2 or 3 minutes, stirring constantly. Add this to the soybeans. Then add the tomatoes, the tomato paste and stock or brother stir until well mixed and simmer for about 1-1/2 hours.
I cooked mine all afternoon, about 5 hours and it was great!!!!!! For 1-1/3 cup you will have about 7 grams of carbs and 28.4 grams of protein!

Jen, the acupuncturist says I need to be "blood building" because of my PCOS, and these dark, richly colored foods help with that. Apparently other Chinese medicine practitioners recommend rich meat products like liver for blood building, my my acupuncturist believes that meat products are not all that clean. So she suggests black beans, beets, spinach, sweet potatoes, etc.
Scbegonias, I'm flattered that you think I'm adept at altering recipes! I'm getting better at it, used to be a strictly "by the book" kind of gal.
Tas, interesting about the fermented soy stuff! I always though that there was a TYPE of black beans that were actually soy beans (the organic brand I buy at the healthfood store has both a black bean and a black soy bean variety), but not all black beans (turtle beans) were soy. I'll have to look into it some more, as soy can affect thyroid function. Interesting, thanks for the info!

My husband makes good "carajotas" -- Venezuelan black beans. We eat them with rice and cheese (goat cheese crumbles, or feta, or queso cotija).
1 lb dried black beans
garlic (powder or minced)
onion (probably 1/2c or so)
salt, cumin, and pepper to taste
put beans in a pot or large tupperware, and cover with water. Soak beans overnight. put beans, garlic and onions in a stockpot with water to cover and simmer until beans are soft. Add spices to taste (make sure beans are as soft as you want them before adding salt). Simmer another 30 min to blend flavors.
