Talking Recipes for week of MAY 27- MAY 31- Everything Choloclate!!

Ladies-- I am starting this weeks recipe post early as I am off on Monday.....

Dipping Chocolate

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 ounce unsweetened chocolate -- 30g
2 tablespoons cocoa butter
1 tablespoon cream -- 20 secs micro/wave
2 tablespoons splenda -- to taste

GENTLY melt chocolate and cocoa butter using double boiler system. Remove from heat before the chocolate is fully melted and stir until all is liquid. Pour in the cream, vanilla and sweeteners while stirring. DIP before chocolate hardens.

Chocolate Meringues


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 egg whites -- (room temperature)
1 teaspoon vanilla
1/8 teaspoon cream of tartar
1/2 cup splenda
1 tablespoon unsweetened cocoa

Pre set oven temperature to 225°F-120°C. Mix the artificial sweetener with the cocoa and set it aside.
In a metal bowl, beat together 4 egg whites, vanilla, and cream of tartar until it forms stiff peaks. Add sweetener/cocoa mixture and beat until blended.
Drop about 1 tablespoonful onto a cookie sheet covered with waxed paper. Bake for 1 hour.
If crisper meringues are desired, turn off the oven after 1 hour and let the meringues sit another 30 minutes before removing.

Quick Chocolate Mousse

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 fluid ounces heavy cream -- whipped 85gr
1/2 cup ice water
1 tablespoon cocoa
2 tablespoons splenda -- to taste
strawberries for garnish .

Beat all ingredients until soft peaks form. Spoon into dishes.

Chocolate Baked Mousse Cake

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
6 ounces chocolate, unsweetened -- 225gr
4 ounces butter -- 125gr
1 dash cream of tartar
2 1/3 tablespoons eggs -- separated
1/2 cup splenda
1 teaspoon vanilla

Preheat oven to 325°F-160°C. Melt chocolate and butter over low heat. Beat egg yolks and 3/4 c. splenda until very light and fluffy. Gradually beat in chocolate mixture and vanilla. Beat egg whites with cream of tartar until soft peaks form. Add remaining 1/4 c. splenda, and continue beating until stiff. Fold carefully into chocolate mixture. Pour 3/4 of the batter into an ungreased 9 inch 230mm springform pan. Cover and refrigerate remainder. Bake 35 minutes, then remove and cool. (Cake will drop as it cools.) Remove outside ring. Lightly stir refrigerated batter to soften. Spread on top of cake. Frost with whipped cream, top with chocolate leaves as garnish. Refrigerate several hours.

Chocolate Coconut Balls

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------

3 ounces Cream Cheese -- 85g
1 ounce unsweetened chocolate -- 30g
1/2 cup coconut flakes -- Unsweetened
8 tablespoons splenda

Melt the chocolate, mix completely with cream cheese. Mix in splenda (you may need more or less depending on your tastes) and then mix in coconut. Shape into about 15 balls. Chill and serve!

Chocolate/Peanut butter Globs

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 ounce unsweetened chocolate -- 30g
1/3 cup peanut butter -- sugar free
2 tablespoons butter
1/3 cup ricotta cheese
1/2 cup splenda
1 teaspoon vanilla extract

Melt first three ingredients in microwave or over low heat. Stir in remaining ingredients and drop by rounded teaspoons on waxed paper. Chill until firm.

Sugar Free Fudge

Recipe By :
Serving Size : 24

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 cup butter
2 ounces unsweetened chocolate -- 60gr
1 cup splenda
1 teaspoon vanilla
1/2 pound cream cheese -- 250gr
1/2 cup chopped nuts -- optional

Melt butter over low heat. Add chocolate and stir until melted. Remove from heat and stir in sweetener and vanilla. Combine chocolate mixture with the cream cheese and beat until smooth. Stir in nuts--if used. Spread in lightly greased 8" - 200mm square pan. Refrigerate until firm and keep in frige. This is great and yoiu don't even notice the cream cheese even if you don't like cream cheese. You can add more splenda if you like it a little sweeter since some chocolate is a little more bitter than others. When set cut into 24 squares.
