I do a really low fat recipe for rice that I love, make rice according to package directions for 2 cups cooked. mix with one can, rinsed and drained, of black beans and 1/2 cup of your favorite salsa - you can buy extra mild - and heat through. Wrap mixture up in your favorite tortilla, with 1 tablespoon shredded cheese, lettuce, veggies, sour cream and enjoy! If you like a little spice, add more salsa. I love hot sauce and usually add that. But DH likes them mild and they are VERY filling. |
