Pepper steak! Cut into strips, brown with some onion and garlic. Add a few cans of undrained diced tomatoes, canned shrooms, red wine, soy sauce, beef bullion and simmer for 45 minutes. Add cut up peppers and simmer until done. Thicken with cornstarch slurry. Serve w/rice (brown or regular). I also add green beans. I can give you a more specific recipe if you want.
