I do feel somewhat fortunate that I had some pretty decent eating habits before I was diagnosed with PCOS. I think it's made adjusting my diet less difficult. Here's a salad I pretty much ate for lunch every day - and still do:
You can buy a Rotisserie chicken ( I prefer the lemon pepper one ) and shred it with a knife. One chicken should be enough meat for an entire week's worth of salads.
Now I must warn - there's no salad dressing / oil / vinegar for this salad :
You can choose what proportion of ingredients you want :
Spring Lettuce Mix ( as much as you want - I use about half a bag )
1 teaspoon fresh parsley
1 teaspoon fresh diced red onions
1 sliced boiled egg ** optional **
1 roma ( or roma sized ) tomato diced
2 teaspoons of sliced almonds
3 Table spoons of lemon juice
3 table spoons of lime juice
Croutons ** optional**
2 teaspoons of shaved parmesan cheese
You can choose how much chicken to add
Grind some fresh black pepper over all of it
Toss and munch away
I'm going to safely assume that this is pretty healthy hehe - but it's really good on your taste buds.
