In our attempts at a healthier diet dh and I bought some Salmon and have no idea of the best way to cook it!?! Could you please share with me some recipes and maybe even some side dish ideas to go along with it?? I would be forever grateful! TIA.

We use an indoor grill pan and just brush olive oil on it with salt and pepper. For a side, we sautee some onions, add a bag of frozen spinach, a small jar of capers and a small can of diced tomatoes and serve the salmon on top of that!

marinate in a teriyaki (sp) sauce then grill or cook in skillet with a little olive oil, it only needs to marinate about 30 minutes and the pan needs to be really heated before you put the fish in or else it will stick and fall apart. I have also done it in foil packets in the oven with lemon pepper and a few lemon slices, turns out pretty good.

funny you ask. we just had salmon tonite! we love it, but its too pricey to eat too often. i have a couple ways i make it, the first not as healthy as the second, but yummy!
i like to bread it first with a little flour, then dip in milk, then in bread crumbs mixed with some lemon pepper. then i spray a casserole dish, and bake it in the oven till flaky at 425 degrees. my mother in law likes to fry it like that, but you get the same taste in the oven, and it cuts out a lot of fat and oil
this next one is from cooking light magazine, and is absolutely delicious, and not your typical way to make salmon.
Barbecue Roasted Salmon
Ingredients
1/4 cup pineapple juice
2 tablespoons fresh lemon juice
4 (6-ounce) salmon fillets
2 tablespoons brown sugar
4 teaspoons chili powder
2 teaspoons grated lemon rind
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
Cooking spray
Lemon wedges (optional)
Preparation
Combine first 3 ingredients in a zip-top plastic bag; seal and marinate in refrigerator 1 hour, turning occasionally.
Preheat oven to 400°.
Remove fish from bag; discard marinade. Combine sugar and next 5 ingredients (sugar through cinnamon) in a bowl. Rub over fish; place in an 11 x 7-inch baking dish coated with cooking spray. Bake at 400° for 12 minutes or until fish flakes easily when tested with a fork. Serve with lemon, if desired.

Cover a pan with tin foil for easy cleanup, place salmon filets skin side down if they still have skin
Spread a little mustard over salmon
Sprinkle dill on top, also salt and pepper if you wish
Drizzle with a little olive oil and broil for 8-10 mins

Whenever we have salmon at home we bake it in the oven, in foil packets, with lemon slices, chopped up (red) onion, and rosemary. There's probably more to it like salt and pepper but I know those three are the bulk of the recipe. I think it takes about 20 minutes to cook.

those sound so yummy. i think i might go buy some salmon for this weekend. Does it have to have the skin on one side of it? I dont think i've seen it at our grocery store with the skin on it.

Nope, doesn't have to have skin. I prefer it without, but I like the fresh-frozen wild Alaskan salmon better than farm-raised, and it usually still has the skin on. If it does have skin on, it's pretty easy to just slide a knife/fork between the meat and skin after it's cooked.

We buy frozen individually packaged salmon from costco. It's relatively inexpensive and convenient.
Once thawed take foil (spray with pam first) place a piece of salmon on the foil, put a little olive oil or butter then sprinkle with Paul Perdone salmon seasoning. Roll up with sides of the foil, to make a little packet. Put on the grill for about 12-15 mins at around 300.
My boyfriend makes awesome cedar plank salmon. You can get cedar planks at the grocery store, soak them for a couple hours in the sink. Use salmon with the skin still one it (it sticks to the plank, you can use a spatula to separate it when serving). Season as you wish. Use a bbq, cook till desired doneness. It's really good.
hm i'll have to try that. my husband always gets cedar plank salmon when we go out to eat at a seafood place but thats when we go out of town since we don't have any places here that have it.

We eat salmon at least once a week. In a bowl mix 1 tsp of sea salt, 1 tsp of black pepper, and 2 tbs of lemon juice (from a real lemon, you will use the lemon in a minute)
Pour this mixture on top of your salmon and rub it in pretty good. Put your salmon on your George Foreman grill skin side down. On the top put lemon slices to completely cover your salmon. Cook until done, usually about 8 minutes. Very healthy, very easy, and very delicious.

I have read in a couple of books that wild salmon is a lot healthier than farmed salmon - I have even read that eating farmed salmon might be counterproductive health-wise because farmed salmon apparently contains high levels of Arachidonic acid (AA). As far as I can tell, Arachidonic acid seems to have pretty much the opposite effect of the benefits that omega-3 fish oils are supposed to offer; there is a lot of info on AA (but not pertaining to farmed salmon) in Barry Sears' 'The Anti-Inflammation Zone'. I think that essentially farmed salmon are fed economical feed like for example corn (which is high in omega 6's, which can lead to the production of AA) instead of eating algae, marine plants, and fish and crustaceans like the wild salmon.
There might also be water quality concerns with famed salmon and environmental concerns related to salmon farms.
I think canned salmon is usually wild and I assume that frozen might also stand a better chance of being wild. I think you have to assume that unless it labeled 'wild' or 'wild caught' , the salmon you buy (most places, most parts of the year) is very likely farmed.
