I'm not sure if this has already been posted, but I had to share it since I just found it.

The glycemic index for any recipe will be lower than for any single ingredient. Adding fat, fiber and protein slows the absorption of carbohydrates, helping to control insulin response. Remember, portion size really does matter. Too much food eaten at any one time will trigger those unwelcome insulin surges needed to "clean up" excess glucose.

Thank you so much for telling us about this site. I've been exploring it and it's wonderful. I just had to copy this recipe since it sounded so yummy!


Chai Oatmeal
Be sure to use the long-cooking oatmeal for the lowest glycemic choice!

4 cups water
1/2 teaspoon ground cardamom
1/4 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground clover
pinch ground black pepper
1 cup steel cut (Irish or Scottish) oatmeal
1/4 cup butter (optional)
2 teaspoons ground flaxseed
1/4 cup heavy cream
1 tablespoon agave nectar or alternative sweetener (to taste)


Bring the water to a boil in a medium saucepan, adding the spices. Add the oatmeal, butter and flaxseed, stirring. Reduce the heat; simmer for 30 minutes, stirring occasionally. Add a small bit of water, if needed, during cooking. Stir in the cream and sweetener.

Makes 4 (1 cup) servings.

1 serving:
11 g. total fat; 21 g. total carbs (with agave or fructose) 16 total carbs (with alternative sweetener); 4 g. dietary fiber; 4g. protein
