    Default Is eggplant parm bad?

    Im doing a low carb diet (trying to figure out the IR diet)


    but what about egg plant parm?
    it has cheese.. i see most agree that cheese is good.
    Eggplant. ITs a veggie..

    Ricotta (not sure about) (could always leave it out)

    and tomato sauce ( i think there is tomato sauce that is ok for low carb diet right??)


    can i have some help with this one?

    Eggplant OR Chicken Parm is fabulous and perfect for a low carb diet. Ragu now has a sauce that's "no sugar added" and it's lower in carbs than some of the other popular brands. Having a little isn't going to hurt your diet at all.

    I would use italian spices and parmesan cheese for the coating instead of breadcrumbs. Would be yummy.

    When I do eggplant parm, I leave out the breading altogether and layer it kind of like a lasagna.

    Egglpant - Bolognese Sauce - Cheese and so on . . . I use a lot of lean meat in my Bolognese sauce too.

    I'm not trying to pee in anyone's corn flakes here, but this really shocked me when I read this...I LOVE eggplant parm, and yes, you can have it on the lower carb diet, but you know what?? I was looking at the nutritional info for eggplant, and it has next to nothing as far as nutrition. HUH? Who'da thunk it??? So, I guess it's like eating celery....

    I'm a horrible cook! Lol. How do you make eggplant parm? It sounds very exotic and different from chicken caesar salad, which I'm getting tired of...
