Default Favorite ways to eat fruits and veggies

I love strawberries and grapes frozen, its almost like eating a popsicle yum! My favorite way to eat veggies especially squash is on the grill. It gives it such a good flavor.

cut em' up and put em' in a bowl and eat away.. i'll eat carrots plain because if you eat enough of them they actually have a flavor.. but if you cook veggies it also brings out all the good flavors in them

Pineapple and mixed fruit in cottage cheese (not the bitter kind)

Peppers, onions, zuc. and such grilled with olive oil or butter, sesame seeds and soy sauce.

Apple surprise- Take an apple and cut the top out like you would a jackolantern. Scoop out the insides, removing seeds to toss, the rest of the insides goes in a bowl. Mix in NSA peanut butter and refil apple with mix.

Banana mush- 2 ripes bananas, 2 heaping tablespoons of NSA peanut butter, mix well. I also add liver pudding. This can also be spread on WW toast and add mayo and a tomato and a slice of liver pudding. Sounds gross, but several docs said it's healthy, lol and I crave it at times.

Blender mixes- frozen berries (NSA), cream and splenda. I don't always add ice, but if it's hot that sets the mix better.

Watermellon or cantelope basket or boat- Take either mellon, cut top as shown in any of photos below. Scoop out mellon with a sharp mellon baller or ice cream scoop to keep mellon into nice sized pieces. Mix pieces with other types of mellons and strawberries and sweetener of your choice (splenda, honey, or none) place back in boat. Garnish as desired.

I like veggies sauteed a lot. I sautee spinach on my own (with garlic and olive oil) and I make it a point to eat the squash and zucchini they serve in the college dining hall. I also like lots of veggies in sandwiches, depending on what kind of sandwich it is. I don't eat a lot of fruit since I need to watch my sugar, but I like the age-old recipe of apples and peanut butter.

I like veggies roasted with garlic and rosemary, although I know it's not the healthiest way to cook them!

I like cucumbers or fresh spinach in my sandwiches
Since I like crunchy stuff when I'm stressed I carry bags of sliced cucumbers tossed with a little sea salt
I toss everything into a salad, blanched green beans, shelled edamame, cucumbers, thinly sliced red onions, spinach, sliced peppers, blanched broccoli florets, carrots
Take fresh beets (if you can get a red and a yellow for the contrast) wrap in foil, and bake until soft. Unwrap, peel cut into wedges and drizzle with olive oil and sea salt

Most veggies - best preparation is to roast with olive oil, S & P as it brings out the flavor. Grilling has the same effect. Grilled veggies with a splash of balsamic vinegar with goat cheese or feta in a pita pocket - delic :o)

    Carrots & Hummus

For me - I love to do a classic Swiss fondue (gruyere & emmentaler cheeses, kirsh, white wine, garlic, white pepper) and have raw veggies and apples to dip. I eat a whole head of cauliflower this way and easily get my 5 a day. Fondue is admittedly higher fat but OK in moderation - plus just think of all those veggies.

Add spinach or greens to any soup.

One of my favorite veggies is zucchini the way they fix it at a japanese grill I go to. They chop them up into 2 inch long, half inch wide chunks, then cut up onion & mushrooms (which I also love), sautee' them with some sesame seeds & a little bit of soy sauce (it doesn't take much at all). It's SO good. I could eat that for a meal alone!
