    I usually have bircher muesli or some other oat based muesli with berries. Or on occassion I'll have toast, with peanut butter or pineapple and cheese.

    This morning I had some pinto beans left over in my fridge so I heated them up, drained and mashed them. I then scrambled some eggs with a little cumin and chili powder. After the eggs were done I transferred them to a plate and heated a small corn tortilla. Once flipped and warm I topped with a spoonful of the bean mixture, cheese, scrambled eggs, salsa, avocado, and a dollop of sour cream. My DH and I are taking the canoe out today to fish a local lake. I know we are going to burn lots of calories so I wanted something that was filling and would last.

    Default Perfect Protein Pancakes (Flourless)

    Here is a great recipe for pancakes that have no flour in them and you would never know just by eating them. I have made this for many people and they never believe they are flour free.

    2 eggs
    1/2 cup ricotta cheese
    1/4 cup vanilla flavored whey protein powder
    1/2 teaspoon baking powder
    1/8 teaspoon salt

    Heat griddle over medium heat and spray with non stick cooking spray.

    Mix eggs and ricotta will quite smooth mixture. Whisk in the dry ingredients.

    Drop batter onto griddle by the tablespoonfuls to make silver dollar pancakes. When the bubbles on the surface of the cakes break and stay broken they are ready to be flipped and cooked on the other side.

    Serve with butter / butter spray and sugar free syrup.

    This recipe makes approx14 silver dollar pancakes each with .6 grams of carbs, no fiber, and 2.5 grams of protein. I recently discovered the fiber powder that dissolves easily so I would probably add some to the recipe to up the fiber content.

    I really like Carbmaster yogurt I buy at Kroger - only 4 carbs and 12 g. protein. I like vanilla and mix it with 1/2 cup of frozen wild blueberries and a handful of walnuts.

    I got a recipe for veggie frittatas from the South Beach book which is tasty and low-carb.
    I don't have the exact recipe, but here's what I do:

    2 eggs
    egg white, according to amount of veggies
    veggies cut fine (I use broccoli, thawed chopped spinach, onions, green peppers)
    salt, and pepper flakes
    shredded low fat mozarella cheese, half a handful

    Mix together. I add the egg white last, adding enough egg white to make the mixture cake batter consistency.

    Bake in muffin tin. Each is meant to have 80 cals or so and I have 2 for breakfast. Some days I eat one with a salad for lunch.

    They are delicious! A friend adds chopped up cooked lean sausage to hers for additional protein. I plan to try that in the future, but the veggie version is a great recipe on it's own too.

    The frittata sounds good, but I can't see myself eating a breakfast that isn't sweet. Maybe for lunch or dinner though. I don't know why, I just have to have a sweet breakfast. Unfortunately, I don't think I can find the ingredients for the no-flour pancakes where I live.

    Since I've had to change my eating habits I've been eating instant oatmeal most mornings (1/2 a cup). I cook it in milk usually and because I don't want to add any sugar I usually mix it up with fruit and sometimes flavor it with vanilla, cinnamon, or almond butter. I really never thought I'd be eating oatmeal, but I really like it now.

    If I want something quicker and lighter I eat 1/2 a cup of branflakes with 1.5% no sugar yogurt and also add fruit to it. I also put roasted almonds or nuts on that.

    I was used to eating at least a cup and a half of breakfast cereal up until recently and it was way too many carbs. My nutritionist said I could have 1/2 a cup in the morning, preferably wholegrain. Truthfully, it just wasn't as filling as my "new" breakfasts.

    I want to try out some of the breakfast rice and quinoa recipes that I've seen online, but I haven't gotten round to it yet. If it turns out decent I'll post a recommendation and the recipe.

    I go through periods of different things.

    Sometimes I do a yogurt (Yoplait) and a piece of toast with PB or a piece of fruit.

    Other times (lately) I do quick oats (regular oats are too hard for my tummy to break down) with cinnamon, raisins or dried cranberries or frozen mixed berries, and some nuts - currently walnuts. It's so yummy and very filling!!

    If it's a weekend then I may do 2 eggs and 1 piece of toast with a little Brummel and Brown margarine on it.

    Or make waffles for my DH and I - 1 waffle w/ Brummel and Brown and lite syrup and some fruit on the side.

    It depends. I love to eat a yogurt at least once a day (it REALLY helps to keep me regular) and breakfast is just the perfect time to do this!

    Instant oatmeal has a higher GI than traditional rolled oats. This is due to the extra processing to make the stuff cook quicker which means it is also easier/quicker for your body to digest (hence higher GI). Old Fashioned rolled oats are definitely a better option over the instant kind.

    Hmm.. I feel as if I should have known that. In general, I do try to eat only whole grains. Bye bye instant oats...
    I have made a switch to making granola (with rolled oats). It's a lot easier to eat on summer mornings than hot cereal. I bake it with apple sauce and molasses to sweeten it some, but mostly I eat it with fruit which helps sweeten it enough. I mix it with 1.5% plain white yogurt (it has my country's diabetics society seal of approval on it).

    I've been trying eat eggs and other things for breakfast, but I just can't seem to go without something sweet in the morning.

    an apple with pb would be enough for breakfast and something sweet.

    also like low carb master yogurt from Kroger with granola. That or I use fresh blueb or straw.

    also lenders ww bagels only have 30 carbs per whole bagel and 9 grams of protein with some cream cheese or pb it wouldn't be so bad. Though I prefer and egg with it. Keeps my head from swimming.

    Homemade protein shakes can be made sweeter

    Steel cut oats can be cooked and are lower gi with dried fruit or applesauce, cinnamon etc. I make them in a mini crockpot that way they are bubbling and creamy by morning for me.

    I love steel oats!

    My go to for breakfast is greek yogurt. It is higher in protein than regular yogurt. I add in some fruit or honey and ground flax seed.

    My looking for a variety in the morning myself. Eating eggs or egg beaters is getting old. I sometimes eat oatmeal (not the instant, way to high in carbs) or I may eat a whole wheat english muffin with peanut butter. Other than that I am at a lost. I try not to eat any fruit early in the morning, so fruit for breakfast is out for me.

    Here is something I do when I'm tired of the same ol' same ol'.

    Saute low GI veggies: squash, aspragus, green beans, brocolli. Then, I toss in a few halved cherry tomatoes or diced tomato, and let it juice out and come together. I salt and pepper this, maybe throw in some parsley. Then I crack one or two eggs over it, and cook the eggs until they are medium. I slide it out of the pan and break the yolks so they run down on everything. If I can afford the calories that day, I'll sprinkle with swiss or cheddar. There is something about the veggies and the sweet tomato, and the yolks all getting together that is just amazing (to me, at least). And if I have the cheese on there.... oh heaven!
