I made this last night and loved it. Fast, easy and delicious. I work full time so I need fast ways to eat healthy. The last thing i feel like doing after work is cooking. I avoided this recipie for years thinking it was bland but the joke was on me. I like veggies anyway so this really works for me.
Pre heat oven 400. Needs to be hot.
Get a glass bakind dish out.
Line flat bottom of dish with asparagus spears
Slices of green zucchini
Pieces of red, green or yellow peppers,
I also used slices of butternut squash.
Sprinkle parsley flakes over veggies.
Put in 1 to 2 tablespoons of olive oil.
Roll the veggies around in the oil to get all pcs. coated.
salt and pepper to taste.
Roast in the oven for 10-15 minutes.
Take them out and eat them.
