    Default Need some help....PLEASE

    OK...Arbys has this new Chicken Fruit Sandwich and I like it...they don't have a list of what they put in it...but it looks like apples, Chicken, grapes and a few other things.

    SOOO...does anyone have any suggestions for a Chicken fruit salad...with what I bought...apples, grapes.

    IT would be helpful..thanks

    I had 1/4 of their sandwich for lunch. It is diced grilled chicken, celery, apples, red seedless grapes and toasted pecans with mayo. I am going to try to do a healthier version at home too because frankly the nutritional info for 1 sandwich is terrifying (hence eating 1/4...which with a 8 oz glass of 1% milk DID fill me up) I think I have read that if you do 1/2 mayo and 1/2 plain unsweetened yogurt that it will be healthier or you might try a little bit with just the yogurt and see how it is. I havent experimented yet but I am interested in anything other people come up with.

    OK I experimented LOL Plain yogurt was a little too tangy....I did about 45% yogurt and 55% mayo (roughly). I was gonna try fat free mayo too but i was running out of salad (or wouldn't have had much left for meals tmmw). Plus I used a LOT less of the mayo mixture than they did...things were just lightly coated. I only used about 2 tbsp of mayo (and about a tablespoon and a half of plain yogurt) tops to one of the $2.50 bags of tyson grilled chicken strips, just shy of 1/2 a red delicious apple (small one not the huge ones), about a stalk and a half of celery, about 7 pecan halves broken in pieces and toasted in a skillet and about 15 or so grapes (I think) ---used black seedless and halved them. Turned out good and I know it isnt 800 and some odd calories!!!!!

    I am not 100% sure on the mayo and yogurt amounts. So start with less than i say here and add more if needed lol. It was not much dressing at all though. It may not have even been as much as I said. Start with about 1/2 of what I say here.

    I tried and tried to get a picture that looks appetizing but my digital cam isnt cooperating too well since its been dropped (little cousin) and bounced off the floor. I promise it tastes better than this looks and there is more in the container than it looks I think that is a 1 or 2 qt container about 1/2 full.

    my mum makes a fruit salad thing which would probably work with cold cooked chicken in it. not sure about the health factor though.

    shredded white cabbage
    black grapes, seeded and sliced in half.
    thin wedges of apple
    peeled segments of satsuma (baby oranges)
    walnut halves
    tomato wedges
    white wine vinegar
    low fat mayo
    mint sauce

    it tastes healthy though, if not too much mayo
    could probably substitute the walnuts with the chicken.

    I made a great chicken & fruit salad on the weekend. I'll have to look up the exact amounts, but it contains: chicken, grapes, celery, apple, cantaloupe, sliced or ground almonds, and mayonnaise - I substituted with a home made mayonnaise since I don't like all the stuff that is in the commercial brands.
