    Strawberry Whipped Cream Crepes
    Amount Measure Ingredient -- Preparation Method

    Crepes:
    2 eggs
    1/3 cup heavy cream
    1/3 cup water
    2 tablespoons butter -- melted
    1/4 teaspoon salt
    1 tablespoon splenda -- 1 drop stevia
    3 tablespoons soy protein isolate
    Cream:
    1/2 cup heavy cream
    1/2 teaspoon vanilla -- to taste
    1 tablespoon splenda -- 1/2 drop stevia
    1 1/2 cups strawberries -- sliced
    To make cream: beat cream until stiff, add vanilla and Stevia to taste. To make crepes: whisk together eggs, cream, water, butter, salt, and Stevia until well-mixed. Add protein powder and whisk until smooth. Heat frying pan to medium hot, melt a little butter in pan, and pour in 1/6 of crepe batter, tilting pan this way and that so that batter spreads out. Cook until top is dry and full of air holes, then turn and cook briefly on second side.
    Remove to plate and set aside while cooking remaining crepes.
    To assemble: Place crepe on plate with good side down. Spread with cream. Top with 1/4 cup strawberries, and fold top of crepe over cream and strawberries. Top crepe with dollop of whipped cream and slice of strawberry.

    Avocado-bacon-swiss Cheese Omelet
    Amount Measure Ingredient -- Preparation Method

    3 eggs
    3 tablespoons Half and half -- 50% water,cream
    Salt and pepper -- to taste
    1/2 Avocado -- seeded, peeled,diced
    1 ounce Swiss Cheese -- 30gr
    1 slice bacon

    Combine eggs, half-n-half, salt and pepper and beat well. Pour into well-oiled omelet pan and cook over medium heat until puffy. Add avocado, cheese, and crumbled bacon. Serve either open-faced or folded over.

    Seafood Omelet

    1 cup salmon -- poached and sliced
    3 tablespoons butter or margarine -- divided
    6 eggs -- beaten
    1 tablespoon green onion -- finely chopped
    1/3 cup sour cream
    2 tablespoons parsley -- finely chopped
    dash salt
    dash pepper
    Flake salmon. Heat 1 tablespoon butter in saucepan; add salmon and heat briefly. Combine eggs, green onion, salt and pepper; mix well. Heat remaining 2 tablespoon butter in omelet pan or skillet; pour egg mixture into pan and cook until set. Spoon salmon over half of omelet; fold in half and turn onto warm plate. Spoon sour cream over omelet; sprinkle with parsley.

    Crustless Breakfast Quiche

    Amount Measure Ingredient -- Preparation Method

    1 teaspoon Butter
    1 1/2 cups Heavy cream
    1 cup Cheddar cheese -- grated
    2 teaspoons Dried basil
    2 teaspoons onion -- chopped
    3/4 teaspoon paprika
    1/4 teaspoon garlic powder
    4 eggs
    salt
    pepper
    Preheat oven to325°F-160°C. Butter (or spay with Pam) bottom and sides of a 9-inch - 230mm pie pan. Add cream to a medium saucepan and heat until scalded. Reduce head and stir in grated cheese. When cheese is melted, add basil, onion, paprika, and garlic powder. Remove from heat and cool for 5 minutes. Then add one egg at a time and mix in thoroughly until all eggs are used. Salt and pepper to taste, and mix well.
    Pour mixture into pie pan, place in oven, and bake until custard is set (45-50 minutes). Serve hot or cold.
