I was buying up ingredients for a pizza and happened to look at the ingredients of the different name brand and generic shredded cheeses in our local grocery store. ALL contained potato in the ingredients list. Since potatoes are not on my diet, I've bought a cheese grater and from now on we are only buying cheese blocks or cheese slices. It's sad we have to check ingredients lists on something as simple as cheese when on a lower carb diet!
I noticed that years ago. I believe they use it as a declumping agent or something.
Personally, I prefer to shred my own. I don't think preshredded has a nice texture. It is dry (probably from the starches added) and seems tough or something.

Well, WTF? I just stocked up on 10 bags of shredded cheese today, and sure enough, potato starch. They're all going back, damnit. That kind of crap burns my biscuits.

while this is true, the sugar and carb impact are still very low if you read the information on the back. I've been eating shredded cheese and losing weight like crazy so I'm guessing if you use it in the recommend dosage it will not really impact your sugars/insulin. It's added to prevent caking of the product.

The carb impact listed on potato and white flour products do not tell the whole story. Potato is one of the highest carb items you can possibly eat according to the glycemic index. What makes me mad is it's in everything from TV dinners that don't list potato as a side item to some ice creams and now cheese. It's in those things because it's addictive and high in carbs, even if the package doesn't show that.

Hi Sareybear this is off this threads topic but I just saw your post and was wondering what you are doing to loose all your weight. Are you using the insulin diet? I am sorry I posted it here ladies I cant pm yet (don't have enough posts)

I used to know someone who worked in the food industry. A small amount of potato starch is used to keep some types of cheeses from reforming themselves into a block in the bag. I doubt there's more than a quarter teaspoon in a whole bag of shredded cheese.
It certainly never bothered me in the slightest when I was doing low carb, but I still preferred to shred my own because it just tastes so much fresher.
I lost weight (still losing) eating around 100 carbs a day..all with sugar free foods, or low sugar fruits and veggies, lean meats (sometimes a steak though) and whole grain bread products in limitation. When I crave milk, I drink one cup exactly. Just enough to get the craving out of the way and fulfill my bodies need. I drink plenty of water and sugar free drink mixes to keep me hydrated. Once a month or on a holiday I eat more carbs that I would usually, but I try to stay under 300 (that's such a big splurge I think I'm in Heaven every time) I plateaued for about two months recently and I just started losing again.
