Anyone have any easy recipes in a slow cooker? Im trying to make life alot easier by putting something in the slow cooker before we go to work or go out. I would love to make something quick to eat but also something that will be healthy.
Oh, BTW.. anyone know how to make chicken in a slow cooker?
Even a good recipe for a soup would be fine.. I have lots of spices and cooking aids. Just not many good recipes to make with them. Also, i can cook vegetables with meat, but my husband doesnt like any vegetables besides corn

Skinless Boneless Chicken Breast put them in the slow cooker and add a jar of your favorite salsa a little water and let it cook on low most of the day. Take it out and pull it apart or shred. You can make chicken tacos, chicken enchiladas, chicken burritos. Get some hard or soft taco shells, burrito shells and toppings, lettuce, tomatoes, onions, black olives, cheese, sour cream. Whatever you like.
Skinless Bonless Chicken Breast put them in the crockpot with a can of Campbells Cream of Chicken Soup and a can of Campbells Cream of Mushroom Soup add a can of water to cover the chicken set on low and cook most of the day. Take them out serve with Rice A Roni or Egg Noodles and a veggie.
Butterball Turkey Breast remove out of package and rinse pat dry with paper towels put into the slow cooker and add a pack of Liptons Onion Soup Mix and water to cover. Add salt & pepper and cover and cook on low most of the day. Serve with veggies or whatever you like. I always throw the gravy packet away.

First of all, I just want to say that I LOVE my Crockpot!!!
I've found that almost anything goes! Also, it's often best to add most veggies for the last hour of cooking so that their not too soggy.
A quick standby is 1 can cream of chicken soup, 1 packet of lipton onion soup, about 3-4 boneless, skinless chicken breasts. I add a little bit of water if I leave it on all day.
Also, any kind of red sauces are good to use as a base for chicken. I often make my own sauce using an inexpensive tomato sauce, cilantro, parsley, basil, oregano, garlic, garlic salt, pepper, and onions. Sliced green peppers add a little texture. Melting a slice of cheese on mozarella on top before serving is also tasty.
I've even boiled chicken breasts in the crockpot in just water until they can be pulled apart. Letting it cool and mixing in a little light mayo, salt, and pepper makes for a nice, simple chicken salad. Sometimes I'll add barbeque sauce to the plain pulled chicken and eat it on a bun. Red onions and 2 slices of pre-cooked bacon make it very tasty.
Chicken fajitas are also another nice slow cooker fix. I use cut up chicken breast, use cajun seasoning (or another fajita seasoning), and just add water. Again, green peppers and onions are a nice addition. I've also made cajun pulled chicken by "boiling" the chicken in water with a fair amount of cajun seasoning. This is great on tortillas.
I've also made chicken breasts in a cream of mushroom soup base with onions, cheese, and a dash of white wine. Oregano, salt, and pepper add a little more flavor, and spinach is a nice addition for texture.
Meatballs are my specialty. I first add the ingredients for the sauce (same as for the chicken in red sauce) and use LOTS of seasonings. Next, I season ground sirloin with garlic salt, pepper, and cilantro and form the meatballs. Just add the meatballs to the sauce, and add water. Let cook for several hours, checking occassionally if more water must be added. I often make this throughout the day on a weekend so that I can keep an eye on it. Stirring the sauce, tasting it, and adding more spices to taste is key for these!

sooooo simple chicken in the crock-pot...here goes:
whole chicken, wash and dry (no neckbones or gizzards..take those out and toss)..salt the cavity and put a whole onion cut in half, a few cloves of garlic, and a few pieces of celery (dont have to though) in the cavity as well..these will give it a good flavor and i just use lemon pepper on the outside skin of the chicken..cook on low (6-9hrs) while u r at wk or high(5-6hrs) if u r at home, i always cook it on low and it is melt in your mouth good!!!
