Default Slow Cooker Recipies Thread

Since so many of us like using our crock pots, I thought we could have a thread with your favorite slow cooker recipes!

I'll start:

Southwestern Chicken

1 can black beans
1 can corn
1 can diced tomatos
1 jar (16oz) salsa
~2 lbs boneless chicken (I used thighs, could use breasts)
1 c. chicken broth
1/2 c. brown rice

Add all to slow cooker and cook on low 6-7 hours. Enjoy! This is a big hit in our house and it's soooo easy!

Love the idea! Your recipe sounds yummy! Here is my first recipe:

Anne's Chicken

4-6 boneless, skinless chicken breasts
2 Tblsp olive oil
salt & pepper - to taste
1 pkg. dry Italian Salad dressing mix
1 can cream of mushroom soup
1 8 oz. pkg. cream cheese, cubed
1/2 cup cooking sherry
1 Tblsp finely chopped onions

Place chicken in bottom of slow cooker, brush with olive oil and sprinkle with salt & pepper, then Italian dressing mix. If you have a small slow-cooker, put down bottom layer of chicken and season it accordingly, then layer the other chicken on top and repeat with seasoning. Cook on low 4-5 hours. Approx. 45 mins-1 hr. before serving, mix together cream of mushroom soup, cream cheese, wine and onion in small saucepan. Cook over med. heat until smooth. Pour over chicken, cover and continue to cook. Serve over rice or noodles.

This is one of my favs. You can leave off the wine if you want. I've never actually used it since I let this simmer while I'm at work.


The Ultimate Chili

Original recipe yield: 6 servings.
Prep Time:10 MinutesCook Time:6 Hours 10 MinutesReady In:6 Hours 20 MinutesServings:6 (change)

INGREDIENTS:
1 pound lean ground beef
salt and pepper to taste
3 (15 ounce) cans dark red kidney beans
3 (14.5 ounce) cans Mexican-style stewed tomatoes
2 stalks celery, chopped
1 red bell pepper, chopped
1/4 cup red wine vinegar
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried parsley
1 teaspoon dried basil
1 dash Worcestershire sauce
1/2 cup red wine

DIRECTIONS:
In a large skillet over medium-high heat, cook ground beef until evenly browned. Drain off grease, and season to taste with salt and pepper.
In a slow cooker, combine the cooked beef, kidney beans, tomatoes, celery, red bell pepper, and red wine vinegar. Season with chili powder, cumin, parsley, basil and Worcestershire sauce. Stir to distribute ingredients evenly.
Cook on High for 6 hours, or on Low for 8 hours. Pour in the wine during the last 2 hours.

A Side Dish~

Great for summer so you don't have to use your oven.

Baked Potato's

Simply wash the potatos (use as many that will fit in a single layer on the bottom)
Poke holes all over them with a fork
Rub outside with butter
Cook on high for 4 hours

They come out good, bigger potatos make take longer.

Mrs. M ~ can you fill the crock pot also? I have a tall skinnier one so covering the bottom would only take 2. Awesome idea!

I haven't tried it, I ususally only make 2-3 at a time anyway. Its worth a shot, if they don't come out good for baked potatos you could always cut them up for potato salad or something~

I have a few Slow Cooker Recipes that I make alot, here they are:

Slow Cooker Roast Pork with Fruit

1 medium onion, sliced
1 pork boneless lion roast, 2 pounds
1 package (8 ounces) dried fruit pieces or raisans (1 1/2 cups)
1/2 cup apple juice
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon

1. Place onion in 4 to 5 quart slow cooker, place pork on onion, top with fruit. Mix remaining ingredients, pour over fruit.
2. Cover and cook on low heat settting 7 to 9 hours or until pork is tender, pour fruit mixture over pork.

Here is a real easy one that I make alot:

*I never really measure on this one.

4 to 5 boneless, skinless chicken breast
1 small can of cream of chicken soup
1 small can of cream of mushroom soup
salt, pepper and garlic powder to taste.
add water to cover the chicken

I cook this most of the day on low, I start in the morning and by late afternoon or early evening it is ready. I usually make chicken rice a roni with this and serve with the rice. The chicken is sooo tender and with the cream of soups it is sooo good, I pour it over the chicken and rice and serve. It is just something really easy.

* You can buy the bigger can of the cream of chicken or cream of mushroom soups.

Slow Cooker BBQ Ribs

3 1/2 pounds of pork lion ribs
1/4 cup packed brown sugar
1/2 teaspoon pepper
3 tablespoons liquid smoke
2 garlic cloves, chopped
1 teaspoon salt
1 meduim onion, sliced
1/2 cup cola
1 1/2 cups BBQ sauce

1. Spray inside of 4 to 5 quart slow cooker with cooking spray.
2. Remove inner skin from the ribs. Mix brown sugar, pepper, liquid smoke,garlic and salt, rub mixture into ribs. Cut ribs into 4 inch pieces. Layer ribs onion in slow cooker. Pour cola over ribs.
3. Cover and cook on low heat setting 8 to 9 hours or until tender. Remove from slow cooker. Drain and discard liquid.
4. Pour bbq sauce into shallow bowl. Dip ribs into sauce. Place ribs back into cooker. Pour any remaining sauce over ribs. Cover and cook on low setting for 1 hour.

Roast Beef with Gravy

1 boneless beef sirlon tip roast (about 4 lbs) or what ever you got at home
1/2 cup flour
1 envelope brown gravy mix
1 envelope onion soup mix (I use 1/2 of the pkg for less of that onion soup mix taste)
2 cups cold water

Cut roast in half;rub with 1/4 cup of flour. Place in slow cooker. In a bowl, combine soup and gravy mixes and remaining flour; stir in water until blended. Pour over roast. Cover and cook on low for 6-8 hours or until meat is tender. Pull apart with forks. Serve with mashed potatoes.

Yum, yum, yum! All of these recipies sound so delicious - I can't wait to try them!

Another one from last night:

2lb pork tenderloin
1 onion
2 sweet potatos
1 can diced tomatos
~ 1/2 c red wine or sherry (I used a little of both)
~1/2 c chicken broth (or any broth)
Garlic salt
Pepper
Oregano
Minced garlic

Rub tenderloin with garlic salt and pepper. Place in slow cooker on top of sliced onions. Place peeled and cubed sweet potatos around pork. Add rest of ingredients. Cook high 4-5 hours or low 8 hours. Enjoy! The pork comes out really tender and fell apart as soon as I touched it with a knife - could be good for sandwiches too.

I can't think of a recipe off hand but I LOVE the reynolds slow cooker liner's!!!! They are THE BEST!! Easy dinner and easy clean up!!

Holy cow, I made this today and nearly swooned when I walked in the door. It smells absolutely fantastic and the bite that I sampled was AMAZING. So easy and healthy too! Great recipe - we're going to eat it over a bed of green leaf lettuce.

I also used Tnade's suggestion of trying the cooker liners. It worked great! I can't believe I won't have to hassle with washing that huge thing. Thanks for a wonderful suggestion!

We're trying the Roast Beef and Gravy recipe later this week too. I wish I had a good crock pot recipe to share. I probably do, just need some time to think about it...

This is a great thread. I know i have some recipes, but I willl need to look them up. I haven't used my slow cooker in ages, but I want to get back to it.

Yellowbaby. I do have a question on the Southwestern Chicken. Do you put the rice in with all of the other ingredients, or is the rice cooked seperately?

I never thought about baking a potato in the slow cooker. Great idea for the summer. All the rest of the recipes sound so good too. I am sure I will try them all.

I just added it to the slow cooker uncooked with all of the other ingredients. By the time it's all done, the rice is cooked too. HTH!
