Lightbulb Smothered Chicken- Easy and Delicious!

I found this one posted on a low carb recipe board yesterday and gave it a try. It is, as we say, a "keeper."

"Steph's Smothered Chicken"
2 pounds of boneless skinless chicken breast (I used 4 boneless & skinless breast halves)
1/3 C sour cream
1/3 C Mayo
1/2 packet of dry hidden valley dip or dressing mix
1-2 T heavy cream (optional)
3-4 cans of sliced mushrooms, or fresh
1/4 C (or more) grated parmesan cheese (Yes, the dry stuff in the can--not shredded)

Place thawed (a little frozen yet still works) chicken breasts in a single layer baking dish. Spread mushrooms over the chicken, trying to keep them on the chicken. Mix together sour cream, mayo, HV mix, and cream until blended. Place large dollups of the mixture on each breast, then spread it out so that it covers all meat and mushrooms. Sprinkle grated cheese on top until covered (the more cheese, the more "crusty" it gets). Bake at 375 until top is starting to get orange-brown and crusty - about 45-60 minutes.


This was seriously delish.

~ 497 Calories; 29g Fat (51.6% calories from fat); 55g Protein; 5g Carbohydrate; 2g Dietary Fiber; 162mg Cholesterol; 707mg Sodium. (Based on 4 servings. If you use more chicken, do the math accordingly.)

Ummm! I made this last night and it was good, rich, filling and very tasty. My DH loved it too and thats great for he and I to like the same things. Thanks for this recipie

Another thanks for the recipe! I fixed it for my parents, who normally dislike my low carb meals, and my mom was complaining about having to eat my food again. However, all of us loved it, and my brother who is coming to visit this weekend asked me to make it for him after hearing about it.

I fixed this last night for dinner!! I was at 1st skeptical about low carbs tortillas, but when I tasted it, it was heaven in my mouth!! This one is definitely a keeper!!

And one more thing... I made this again with reduced fat sour cream and reduced fat mayo and it was pretty good too. The top did not get quite as crispy. My DH likes it crispy. It was still tasty and filling. I will make it both ways now.

I am definitely not a believer in reducing the fat in recipes (I consider fat my friend), but I will keep that in mind if anyone asks.

The recipe sounds great!

It is a ranch dressing mix. I don't know if that helps.

Mez- If you can't find anything similar to the dressing mix, I've also seen very similiar recipes using dry onion soup mix. It wouldn't be the exact same taste, but all the soup/dressing mix is for is to give the chicken some flavor. If you'd like the exact recipe, I can try to post it tomorrow.

Thanks guys!

I'm going to try some dry onion soup mix, as was also suggested on the Aussie/Kiwi section.

Haven't made the recipe yet, because I have not eaten anything so rich in 6 weeks and don't know how my body will handle it.

I'm keeping the recipe on hand to feed friends next time they come over.

Talking Tried and loved it.

I tried this recipe last night. I did use all fat free or lowfat items and left off the cream. IT WAS DELISH!!!!!!! and only 9grams of fat. I counted!!! This was so awesome.
