Hi- I am trying to get this whole IR diet down (not IR but on Metformin and was told by my doctor to try and follow IR diet.) I am now confused b/c it appears that some foods that I thought were safe, like whole wheat bread, are actually not that low GI, and that foods I thought I couldn't have at all, like chocolate, are actually low GI! So I am totally confused. Am I supposed to be counting carbs or sticking to GI diet? I really want to know what I can eat this Christmas!

I have mild IR and am on Met. I buy 100% whole wheat flour bread, and it's one of the lowest GI breads you can get. I also buy no sugar added chocolate which is low GI. I don't count carbs, but avoid high GI foods overall.
I'm doing low GI foods because PCOS appears to be caused by the production of too much insulin in the body. Foods that have a low glucose index will not cause the body to fire off so much insulin, so they really help to regulate the body. I have not been diagnosed with IR, so I do not know much about the diet nor how it differs from GI.
Going exclusively "low-carb" is not always necessary, because some carbs are excellent for you in moderation (such as stone ground whole wheat, thick cut old fashioned oatmeal, any "whole" grain). They will not add bulk (as long as you eat them in moderation), and will serve your body so many benefits... including mopping up our excess insulin. I really recommend looking into the G.I. diet. Not to sound like an infomercial, but Rick Gallop's book "Living the G.I. Diet" is awesome.
