the smalled amt of olive oil spray you need for it to not stick
salt, pepper and dried basil leaves to season the chicken (optional)
1 pound boneless/skinless chicken breast with the visible fat trimmed off
1 cup or more pasta sauce (my favorite is tomato basil - simple and delic.)
freshly grated Parmesan (i use enough that it "looks good" - about 1/3 cup i guess)
I used a nonstick skillet so i don't need much oil... set the heat to medium high.. i season the chicken slightly with the tiniest amount of salt and fresh ground pepper and dried basil leaves, this is up to you. then you want to brown the chicken 2 minutes on each side and then add however much pasta sauce you want, i usually do it so it just covers it and then let it simmer for about 4 minutes.. the sprinkle your parmesan cheese over it and cover it with a lid and let it sit and cool off and melt the cheese for about a minute or 2...
for you people who have to have chicken parm with some pasta - try whole wheat pasta!!! there is barely any difference, my DBF is in love with pasta and told me that if there wasn't a change in color, he wouldn't know the difference
