Default The soup that eats like a meal!

Does anyone have any good (and easy) soup recipes? I like making a big batch of soup and freezing meals for the winter. My DH doesn't particularly care for "brothy" soups though...so I'm running out of new soups!

This recipe is a lot like the Pasta fagioli at the Olive Garden, which i LOVE!

Pasta con Fagioli Cannellini (White Bean Pasta e Fagioli) Ease of preparation: Basic
Prep Time: 15 minutes
Cook time: 18 minutes
Servings: 4
Regions: Toscana
Wine pairing: Red

Ingredients

3 tbsp.extra virgin olive oil
1 cupchopped onion
1 cupchopped carrot
1/2 cupchopped celery
2 clovesgarlic, minced
1 (32 oz.) canchicken broth
1 (19 oz.) cancannellini beans, rinsed, drained
4 largeplum tomatoes, chopped (about 4 cups)
1-1/2 cupsBARILLA Ditalini
1/4 cupchopped parsley, divided
1 tbsp.chopped fresh oregano
1/2 tsp.freshly ground black pepper
1/4 tsp.salt
1 cupfreshly grated Parmigiano Reggiano cheese, divided


HEAT oil in large stockpot over medium-high heat. Add onion, carrot, celery and garlic; sauté 3 to 4 minutes or until tender, stirring occasionally.
ADD broth and beans; heat to simmer.
STIR in tomatoes, Ditalini, 2 tablespoons parsley, oregano, pepper and salt.
BOIL 10 to 12 minutes or until pasta is tender, stirring occasionally. Stir in remaining parsley and ˝ cup cheese. Serve with remaining cheese.

Tip: Serve with crusty bread and drizzle with olive oil, if desired.

This one may be better!

Pasta E Fagioli Recipe #481
This is a copycat version of the soup from the Olive Garden.
3 teaspoons oil
2 lbs beef, ground
14 ounces carrots, slivered
12 ounces onions, chopped
14 ounces celery, diced
48 ounces tomatoes, canned -- diced
2 cups red kidney beans
2 cups white kidney beans
88 ounces beef stock
3 teaspoons oregano
2 1/2 teaspoons pepper
5 tablespoons fresh parsley, chopped
1 1/2 teaspoons Tabasco sauce
48 ounces spaghetti sauce
8 ounces dry pasta shell macaroni

9 quarts Change size or US/metric
Change to: quarts US Metric

25 minutes 25 mins prep
Saute beef in oil in large 10 qt. pot until beef starts to brown.
Add onions, carrots, celery and tomatoes and simmer for about 10 min.
Drain and rinse beans and add to pot. Also add beef stock, oregano, pepper, Tabasco, spaghetti sauce and noodles .
Simmer until celery and carrots are tender, about 45 min.
- - - - - - - - - - - - - - - - - - NOTES : Makes 9 quarts!! Just cut the recipe down for smaller batches.

Momma's Amazing Weight Loss Soup. (Ham and Navy Bean Soup)

(it's not diet, I just call it that because that's all I eat for week...lol!)

This is a unrestricted recipe...do what ya want with it, it will still taste the same...gooood.

What you need....

- 1 Leftover Ham, with bone in and meat still on it. Like when you make a ham for dinner save the rest.
- 5 or 6 Carrots, cut in small cubes (to taste)
- 5 or 6 Celery Stalks, cut into small cubes.
- 2 Bags of Navy Beans
- 1 Onion

Take the leftover ham throw it into a big pot and fill with water and a whole onion, skinned. Simmer until broth is fragrant and ham can be easily pulled from bone. (Usually a few hours.)Drain broth and pull apart the ham, making bite size pieces. Put ham back into broth, add carrots and celery. Prepare Navy Beans as per package. (They need to be soaked and cooked.) Add them to soup. Simmer for an hour and serve. This freezes beautifully and tastes wonderful with a pat of butter or margarine. I hth!

I make Pasta Fagioli all the time. My DH's mom's side of the family is Italian so I use thier recipe. And OMG is it ever good!!

I like to make my own chicken/vegtable soup. It makes alot and is so good.

chicken breasts (or whatever kind of chicken you like)
chicken broth
celery
carrot
fresh green beans
onion
bell pepper
red potatos
can of stewed tomatos
Or whatever vegtables you like
garlic
chicken bouillon (optional - I use it to add flavor)
salt/pepper
oregeno or Italian seasoning (or whatever seasoning YOU like)

I boil chicken till done.
Take out to cool and cut up and bite size pieces.
Add chopped up veggies, seasonings and bouillon, however much garlic you want to chicken broth. Add water if needed. Cook till veggies are done. Add cut up chicken when veggies are half way done. Taste and season till liking. You can't go wrong.

What about plain old beef stew- but change it up a bit - add sweet potatos instead of regular ones- also try using a large can of V8 juice for the broth- it is slightly spicy- but loaded with good stuff- Maybe make a big batch of chili - you can do so many things with chili- frito pie- chile cheese and frito baked potatos- chili dogs- chili and corn bread-- yummy!

Taco Soup

2lbs Ground meat of choice
2 cans of kidney beans
2 cans tomato sauce
2 pkg of taco seasoning
2 green peppers cut finely or in chunks

Cook meat then toss all ingredients into a pot and serve when hot

Crush up taco chips and put in soup as garnish
Add sour cream to make milder. Cheddar Cheese works well too

Default Potato Soup and Turkey Veg Soup

Potato Soup - really good only if you are someone who eats potatoes - and it makes a large pot full of soup
Sorry, this recipie was passed down through the family and is rather general

Peel and cube or slice 6-8 large potatoes(I suppose you could use less to reduce carbs)
In a large soup pan, boil potatoes until tender in just enough water to cover them
Slice 1/2 package of bacon or more into strips and fry with 1/2 a large chopped onion until bacon is done and onions are transluscent
When potatoes are finished cooking, do not drain
Drain fat from pan and add bacon/onion mixture to the potato pot
Stir in enough milk to make it creamy and souplike - about 2-4 cups
Bring soup to a boil, stirring to prevent sticking
Season with plenty of salt and some cracked pepper to taste if you like
(By the way this recipe is also great with ham or candadian bacon instead of bacon and you add plenty of shredded cheddar melted into the soup at the end)


Low Carb Low Fat Version of Turkey Vegetable soup

Fry a package of ground turkey breast with a dab of oil in the bottom of your large soup pot
Add 2 cups of vegetable or chicken broth
Add a large chopped onion
Bring to a boil
Add chopped veggies (like Mushrooms, Yellow squash, cauliflower, brocoli, peas, zuccini, green beans, whatever, corn, carrots)
Add a couple cups of water (veggies will cook down)
Add 3 tablespoons of your favorite salsa
Put the lid on and cook till veggies are done
salt to taste

Hope you like the Taco soup. I can live off of it for DAYS and never get sick of it. Let me know how it works out. Plus there is all the meat and cheese and sour cream. Def not lacking in protien.

Okay, stupid question of the day....where oh where can you find white kidney beans? I got the ingrediants for the taco soup today and MOST of the ingrediants for the Pasta E Fagioli, but I can't find white kidney beans? And this was at a Super Walmart!

You can get them in the canned food section or the dry food section like where the rice and the bags of beans are at....

Mmmm...I think I'll try the White Bean Pasta e Fagioli. Do you think it would make much of a difference if I "vegetarianize" it by using vegetable broth instead of chicken broth? It sounds like it would still taste good.
