With all this cold weather, I'm craving soups. I tried a Tomato Soup with Israeli Couscous last night - delicious. Anyone else have outside of the box ideas for soups.
Tomato Soup with Israeli Couscous The Ultimate Soup Bible – page 236 2 Tablespoons Olive oil 1 onion, chopped 1 or 2 carrots, diced 1 can (14 ounces) chopped tomatoes 6 garlic cloves, roughly chopped 6 ¼ cups vegetable or chicken stock 1 cup Israeli Couscous 1/4 c fresh mint sprigs, chopped, or several pinches of dried mint 1/2 teaspoon ground cumin 1/2 c fresh cilantro, chopped cayenne pepper, to taste salt and ground black pepper Heat oil in a large pan, add the onion and carrots and cook gently for about 10 minutes until softened. Add the tomatoes, half the garlic, stock, couscous, mint ground cumin, cilantro, and cayenne pepper, salt and pepper to taste. Bring the soup to a boil, add the remaining chopped garlic, then reduce heat slightly and simmer gently for 7-10 minutes, stirring occasionally , or until the couscous is just tender. Serve piping hot, ladled into individual serving bowls. Serves 4-6 Nutritional Information: 191 calories, 4.2g protein, 31.3g carbohydrate, 6.2g fat (0.8g saturated fat), 0mg cholesterol, 30mg calcium, 1.4g fiber, 44mg sodium
For me I just like to add a variety of vegetable 5 kinds into a pot with some vegetable stock, add a little garlic, paprika {or something else that will add a little kick to it} and mixed herbs, leave it to simmer for about 20 minutes, take it off blend it all, put back in the pan and add a little semi skimmed milk to make it thinner {you do not have to do this if you want thick soup}
Its probably the only way to enjoy it for me as i'm not a big soup person
