Default Spinach recipes???

I have tons of fresh spinach that I need to use before it goes bad. I already eat a spinach salad for lunch every day, so I am looking for something a bit different. Anyone have any ideas on how to use it up?

Thumbs up Spinach recipes

I've been wondering what I can use Spinach for other than salads too, so when I read this, I was motivated to find out! Thanks!

Here are the 2 sites I found the most interesting, with the second one showing recipes for fresh spinach too.
Let us know if there is one you try that you especially like! Spinach is not part of my normal diet, but it supposed to be great for eating in our situation, so I want to try it with the hopes of enjoying it.

Thanks Fuzzy Bear - I will have to try some of these and will let you know how they turn out. In the meantime, here is the salad recipe that I have been addicited too. It is sooooo good. If you are looking to lear to love spinach, this is a great starting point...


Spinach and Mandarin Orange Salad

Fresh Baby Spinach
Chopped Red Onions
Mandarin Oranges
Slivered Almonds (Blanched)

Dressing:
1 Tbl Orange Marmalade
2 Tbl Red Wine Vinegar
Salt & Pepper

Mix well, then mix in Olive Oil to desired texture.

I like home made dressings so you can control the ingredients. Hope you try this one!

Are you trying to stick with recipes that maintain the "rawness" of the spinach? If not, I like this meal: http://www.foodnetwork.com/food/reci...ml?rsrc=search

If you look toward the bottom of the page, you will notice that it is part of a "two for one" meal. I think the spinach only plays into it one day, but you can skip directly to that. Similar to this is florentine (pasta florentine, chicken florentine, etc.). I also like to cook some salmon and place it directly over the raw spinach. Let it rest for a minute or two and the salmon will wilt the spinach just a bit. Mmm!

When I have a huge bag of spinach I want to use up, I like to sautee it with sliced mushrooms and serve it as a side dish. I just put a little dab of butter in a skillet, start the mushrooms first, then add a ton of spinach and a little Worchestershire sauce and cook until the spinach wilts.

A family friend makes a spicey bean soup where she throws spinach in at the last minute and I like it that way too. Her recipe starts with frying up sliced chorizo sausage for the heat, then adding a large can of refried beans with a can of water. Let it cook for a while and just before serving, put the spinach on top and let it wilt.

I get grossed out with sausage, so I've made a strange vegetarian variation of this recipe. I start off sauteeing chopped onion, celery, and jalopeno pepper in olive oil for heat and flavor. Then add a large can of vegetarian refried beans with a can of water. I then add shredded carrots (strange I know) and cook for a while. Then I do the spinach on top at the end. Sounds weird, but if you like spicey bean soup, it turns out pretty tastey and very nutritious.

This is one of my favorite spinach dishes (made with whole wheat pasta of course)

It's also great with a couple tablespoons of tomato paste and/or plain yogurt stirred into the sauce, and with extra veggies (more garlic, onions, sliced bell peppers, mushrooms, etc).

i like spinach best prepared simply:

wash and lightly spin/dry the greens, allowing a bit of water to cling to the leaves. heat a large pan on medium and add a bit of olive oil, then a few cloves of garlic (chopped or whole - throw them in whole if you have picky eaters at home so they are easily picked out). cook garlic until softened, be sure not to brown it. add spinach and a pinch of kosher salt and toss, then cover and cook for just a minute or two or until it's just wilted. top with a grind or two of pepper and serve! easy as can be and beyond delicious! serve it as a side, or in a sandwich... it's really good with eggs in the morning, too!

This is the only way my family is willing to eat spinach - I basicly make a side dish from beans, crushed tomatoes, garlic and salt/pepper. I let is cook until the beans are ready and ten add spinach. After 2 minutes the meal is ready. Spinach adds nice little taste twist and also some lovely color. We use it as a side dish to meat-loaf and roastbeef.
