My husband and I rarely remember to marinate the chicken breasts we eat, which often leads dry chicken. You know what I'm talking about! Well, this evening, I found a recipe that looked yummy.
Stuffed Chicken Breasts:
Take two chicken breasts, thawed. Pound down to about 1/4-1/2 inch so they are both equally thick through the whole breast. Salt and pepper them and then cut a pocket in the side for the stuffing.
To make the stuffing, in a food processor, mix 1 zucchini (cut into chunks), Parmesan cheese (about half as many chunks as the zucchini), as much garlic as you want, and at least six leaves of basil or some other fresh herbs.
Once it is chopped to small chunks, spoon equally into each breast's pocket. Heat over medium heat in a skillet for about three minutes on each side then placed into a pre-heated oven at 350 F for about 15 minutes or until cooked through. I have a frying pan that goes from stove top to oven, for less of a mess.
While it was cooking, I made a salad with mixed greens and chunks of a single zucchini with the seedy part cut out divided amongst the two salads. I topped with basil pesto sauce (store-bought - I hate making it from scratch) and some olive oil. It echoed the basil, garlic, cheese, and zucchini from the chicken.
The chicken ended up being slightly dry around the edges but the stuffing made it less noticeable. Yum!
Total prep and cooking time: 35 minutes.

The last stuffed chicken I made was somewhat similar - I used baby spinach leaves, onion, garlic, salt & pepper, feta cheese and an egg for the stuffing.

I'm gonna definantly use this "technique" but will probably use different ingredients for the stuffing. THANKS for the technique though, you really got the wheels turning
