| Registered User Join Date: Nov 2007 Location: Texas ![]() ![]() ![]() | I have been trying to lose weight and the other day i got a bad craving for mexican food, i kind of threw this together and it came out great! i thought I would pass it on to you all. Hope you enjoy! You need: Two medium bell peppers any color (I used yellow) One pound of bonelss skinless chicken breast One can low sodium Pico De Gallo One cup Low fat taco blend shredded cheese one Pkg. low fat/sodium taco season 1/2 cup water. In a Medium sized skillet heat on low 1/2 cup water and 1/2 pkg taco season, cut chicken breast into small chunks and mix with remainig taco seaoning. Cook in seasoned water covered on Med- low for aboout 30-45 min checking every 15 min. While chicken is cooking heat oven to 350 and core out the bell peppers, when the chicken is done remove from heat and drain, mix with Pico De Gallo and 1/2 cup of cheese bake for about 10 minutes and remove from oven, top with remaining cheese and bake again for about 5-10 minutes checking often , remove from oven and let sit for 5 min. before serving.
