12 large white fresh mushrooms
1 teaspoon of olive oil(or oil of your choice)
1 teaspoon minced garlic(I use the stuff in the jar already minced 1/2 teaspoon)
1/2 package of cream cheese(4 oz)
1/4 cup grated parmesan cheese
1/4 teaspoon black pepper
1.preheat oven to 350
clean mushrooms, and take out stems
chop the stems finely.
2.heat oil in skillet over medium heat. add garlic and chopped mushroom stems, fry until moisture has disappeared, taking care not to burn garlic. set mixture aside to cool
3. when cooled stir mushroom mixture into cream chees, add parmesan, and pepper. mixture should be thick. Using a spoon and fill each cap with a generous amount of stuffing. arrange the filled caps on a cookie sheet.
4.bake for 20 minutes, or until piping hot and liquid starts to form under the caps.
Not sure of the nutritional info, but as you can see everything is low carb!
I LOVE this recipe they taste sooooo yummy, like the stuffed mushrooms you would order from a restaurant. Try it you'll like it!!

Vitex is a herb used to regulate periods! It adapts to what you need! If your like me and get your period too often you are lacking in progesterone, and it helps to raise your progesterone levels! It helps women to ovulate. Lots of women on here use it to try and help them get pregnant. Do a search in the alternative remidies forum, there is lots of info on vitex there!
Vitex is another name for angus cactus, or chaste tree berry.
p.s. the mushrooms are very good! They taste exactly like the ones you get from a restaurant with crab meat! I havent tried it with crab yet, but i'm going to!

Thanks. I will be posting some of my fav recipes soon as I think it is really motivating to keep your menu fresh and try new things.
If I don't keep things varied I will cheat and grab something easy and usually "refined"!
I thought Vitex was a multi so I better get over there and check it out!!

Here are a couple varieties what to put in the mushrooms. Lots of typing, so please excuse any misspelled words.
Basic Directions on Preparing Mushrooms:
Remove the stems and wash all mushrooms. Put mushrooms in a bowl with enough olive oil to coat them well. Fill with your choice of stuffing. Arrange mushrooms in a greased baking dish and add about half an inch water or broth to bottom of the pan. Bake at 375 or 15-20 or until mushrooms are tender.
All recipes yield approx. 16 medium mushrooms
Stuffing ideas: Crabmeat Stuffing
1/2 pound crabmeat (I used one can)
2 Tbsp mayonnaise
1/2 cup shredded Swiss cheese
mushroom stems, finely chopped
salt and pepper to taste
Combine all ingredients and follow the basic mushroom directions.
***My own suggestion*** When I made the crabmeat mushrooms the first time, they tasted good, but they looked very unappealing. You can add a sprinkle of bread crumbs (you won't need many) with a tad more olive oil on top and put the mushrooms back in the oven for a couple of minutes.
Pepperoni Stuffing
5 Tbsp Mayo
1 ounce blue cheese
8 slices pepperoni, chopped
Combine all ingredients and follow basic mushroom recipe.
Ground Beef Stuffing
1/2 pound lean ground beef
salt and pepper to taste
1/2 marinara sauce
Parmesan cheese
Roll the beef with salt and pepper, making 16 meatballs. Cook meatballs in a skillet until they are browned to your liking. Move them to a paper towel to blot of the grease. Roll meatballs into the marinara sauce and stuff one into each mushroom. Sprinkle with parmesan cheese and follow the mushroom recipe.
Bacon Stuffing
8 ounces cream cheese, softened
a little olive oil
1 small onion, finely chopped
8 mushroom stems, finely chopped
4 bacon strips, fried and crumbled (reserve grease)
Saute onions and mushroom stems in reserved bacon grease until tender. Drain off excess oil. In a bowl, combine bacon, onions, mushroom stems, and the cream cheese until well blended. Follow basic mushroom recipe, then broil until the tops are golden.
Creamed Spinach
Creamed spinach (I have no idea on the amount, recipe just says it's good for leftover spinach)
Grated parmesan cheese
Stuff mushrooms with spinach, sprinkle with cheese, and follow mushroom recipe.
Pork Skin Stuffing
1/2 stick butter
1 Tbsp finely chopped onion
1 Tbsp finely chopped parsley
1/2 pork skin OR Triscuit crumbs
1 egg, beaten
salt and pepper to taste
parmesan cheese
Chop mushroom stems and saute them in half of the butter with the onions and parsley until tender. Remove from heat and add the pork skin crumbs, egg, salt and pepper, and mix well. Follow mushroom recipe, but sprinkle with cheese and add a small pat of butter on top of each mushroom before baking.

I don't if you've tried this recipe for mozzarella sticks but it didn't come out to well for me.
The recipe called for dipping the sticks in egg and parmesan and sauteeing in olive oil. I couldn't get the parm to stay on the cheese sticks, so it turned into a big mess.
Maybe I need to add some wht flour or something to make it stick better?

I've never tried making mozzarella sticks, so I'm not really sure what is wrong with your recipe. I take the easy way out and buy the frozen kind. However, I think most mozzarella sticks I've eaten have had some kind of breading on them, so it probably wouldn't hurt to try a little flour or even some plain bread crumbs mixed in with the cheese. Another problem I would think might be a problem is that maybe you didn't use enough olive oil in the pan, so the cheese stuck to the pan. I'm guessing that if you don't care if they are fried, you could try baking them, but I have no idea how they would turn out. Good luck.
