I am going to start a post to get us thinking about summer recipes since the nice weather is upon us......

Any ideas???

Baked Mussels In Garlic Butter

Recipe By :
Serving Size : 4
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
***GARLIC BUTTER***
4 fluid ounces unsalted butter -- 125g
1 teaspoon lemon zest
1 teaspoon lemon juice
1/2 teaspoon parsley -- chopped
1/4 teaspoon black pepper -- crushed
2 cloves garlic -- crushed
***MUSSELS***
500 grams fresh mussels -- 1lb cleaned
1/2 cup white wine
1 stalk celery -- finely diced
1 large shallot -- finely chopped
2 garlic clove -- crushed
1 lemon -- juice of

Place all the mussel ingredients into a large pan, except the mussels. Bring up to the boil. Add the mussels and stir, place on a tight fitting lid. Cook until
the mussels open. Remove half the mussel shell (the top part) and discard. Place the mussels into a large heavy based pan, suitable for the oven. Place a nut
size piece of garlic butter in each of the mussels. Place into the preheated oven for a further 4-5 minutes.

Sea Bass Greek Style


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 pounds sea bass fillet -- 2k 8x250g
2 tablespoons flour
2 tb olive oil
2 tablespoons lemon juice
3 tb Vegetable oil
2 large Yellow onions -- chopped fine
6 Garlic cloves -- crushed
1 bn Parsley -- chopped
1 pn Pepper
3 cups Canned tomatoes
1 Tomato -- chopped
3 Bay leaves
1/2 teaspoon Rosemary
1/2 cup Dry white wine
1 Lemon -- cut into 8 wedges

Dust the sea bass fillets with the flour. In a large skillet place the 2 tablespoons of olive oil and heat it on medium high until it is hot. Quickly sear the fillets on both sides so that they are sealed. Place the fish in a large baking pan and sprinkle on the lemon juice. Set the fish aside. In a medium skillet place the 3 tablespoons of vegetable oil and heat on medium high until it is hot. Add the onions, garlic, and parsley. Saute the ingredients for 3 to 4 minutes, or until the onions are translucent. Add the pepper and stir it in.
In a medium large saucepan place the sauteed onion mixture, canned tomatoes, chopped tomato, bay leaves, rosemary, and white wine. Stir the ingredients together and simmer them on low heat for 40 minutes.
Preheat the oven to3500F-180C. Pour the sauce over the fish and bake it for 20 minutes, or until it is just done. Garnish the dish with the lemon wedges.

BBQ Beef Red Wine Marinade
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups red wine
1/2 cup red wine vinegar
1 cup fresh rosemary leaves -- chopped
1 cup fresh basil leaf -- chopped
2 cloves garlic -- minced
1 tbsp fresh ginger -- to taste
1 tsp ground pepper
1/2 jalapeno pepper -- stem removed

Blend basil, rosemary and jalapeno pepper with a small amount of wine until fine. Add rest of ingredients and blend until smooth. Let sit in a cool spot for 24 hours before using.

1/2 tsp garlic Powder
1/2 tsp onion Salt

Marinate 1lb or so of beef for 1 hour or overnight. Bake in oven 155°F- 75°C, overnight for 10 - 12 hours.

2 tsp wine vinegar
2 tsp prepared horseradish
1 tsp onion powder
2 tbsp lemon juice
1 tsp garlic powder

Mix all ingredients together and use as a marinade. Then use as a basting sauce for the meat while it cooks.

Champagne Marinade for Salmon

3/4 c champagne
1/4 c olive oil
1/2 tsp dry mustard
1/2 tsp dried basil -- leaves
1 dash salt
1 dash white pepper

Combine all ingredients. Pour over 4 salmon steaks or filets. Marinate at least 2 hours. Grill or broil salmon, brushing with marinade during cooking.

Girl, you are quite the chef!!!! Thanks for all the recipes you post!! They all sound so good! However, I am a poor grad student, and hate to cook, so I go for the more simple recipes. But yours sure do sound yummy!!!!! Makes it seem like low-carbing is a treat!!

2 pounds chicken wings
1/2 pound Italian salad dressing -- sugarless
2 teaspoons Tabasco sauce
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 tablespoons soy sauce
1 teaspoon Equal® sweetener -- or brown sugar subst

Place chicken drumettes in large aluminum pan. Mix other ingredients together to make sauce. Pour sauce over chicken drumettes. Marinate overnight. Cover pan with aluminum foil. Place pan on barbecue grill rack to the side of the fire. Slow cook 30-45 minutes or until chicken is almost cooked. Remove drumettes from the pan, place on hot grill over coals, cook until skin is crisp or 3-4 minutes on each side. Serve with barbecue sauce or honey mustard sauce

Parmesan Chicken Wings

Recipe By :Tony & Margaret Blakemore with the help of all low carbers
Serving Size : 8 Preparation Time :1:00
Categories : Low Carb 0-5 Poultry-Game Birds


Amount Measure Ingredient -- Preparation Method

30 Chicken wings
1 c parmesan cheese -- flaked
1 Parsley -- ground
1 tbsp oregano -- oregano or marjoram
1 tsp Salt
1/2 tsp pepper -- freshly ground
1/2 c Butter -- melted

Preheat oven to 375°F-190°C . Mix cheese,parsley,oregano,salt and pepper together and place on a dry tray. Dip each piece of chicken into the butter,then roll in the cheese mixture,coating well. Place on a greased baking sheet. Bake for 45 minutes,turning when brown. Wings will freeze well. Thaw in refrigerator,and heat in a 375°F-190°C. oven. Makes 4 main course or 8 appetizer servings.

Basic Meatballs

Ethnic-Italian Low Carb 5-10


Amount Measure Ingredient -- Preparation Method

1 pound ground beef -- 500g
1/4 cup milk
1 large egg
3/4 teaspoon salt
1/4 cup onion -- chopped
1/8 teaspoon pepper
1/3 cup dry bread crumbs
1 teaspoon worcestershire sauce

Mix all the ingredients together. Shape mixture by Tablespoonfuls into 1 1/2" balls.12mm (For ease in shaping the meatball, occasionally wet your hands with cold water.) TO COOK IN A SKILLET: Heat 1 tbsp salad oil in a large skillet, cook the meatballs over medium heat until brown, about 20 minutes. Drain off excess fat. TO COOK IN THE OVEN: Place the meatballs in a lightly greased baking pan; bake, uncovered, in a 400°F-200°C oven until light brown, about 20 minutes. Drain off the excess fat.
