Wondering if anyone has any recipes for sweet potatoes?? The only way i have tried them is in wedges with home made healthy dip. Tried jacket potato as well.
I usually mash them like regular potatos and eat them with spray butter and cinnamon. Yummy! I like them in wedges too...We bake them in the oven with a little bit of olive oil to coat the pan...

I do mashed with cinammon too. Sometimes I boil them and sometimes I bake them for that purpose. Here's another favorite.
Bake the sweet potato. Cut in half. Top with apple sauce, brown sugar (not necessary) and craisins. (These cranberry/raisins). Bake another 10-15 minutes. These are good enough to be dessert, even without the sugar!
You can also prepare as french fries.
I have a killer sweet potato soufle recipe, but I'm assuming you want healthy? Could be wrong.

Eva, sweet potatoes are one of my favorite foods. I love them baked until the skin is brown and puffy, cut open and dolloped with some butter (could use diet butter if that concerns you ) and sprinkled with a little brown sugar or honey.
I've seen some recipes for oven baked fries, too.

As one of the original Sweet Potato Queens I felt the over whelming need to post...
1/4 tsp ground cinnamon
1 1/2 pound sweet potato(es)
3 tsp SPLENDA (or brown sugar)
8 oz canned crushed pineapple in juice
(nuts or rasins too if you want them- pecans or walnuts prefered)
1. Preheat oven to 425ºF. Coat a 2-quart casserole dish with cooking spray.
2. Place potatoes in prepared dish. Combine crushed pineapple, Splenda and cinnamon in a small bowl; add to potatoes and toss until well mixed.
3. Bake, stirring after 30 minutes, until sweet potato mixture is bubbly, about 45 minutes. Yields about 1/2 cup per serving.
