Talking Taco Soup- cheap and lots of protein

1. Brown 1 lb of ground lean beef, turkey, or chicken
2. Combine these ingredients in a large pot. Don't drain any of them -- just dump it in!

-2 cans red kidney beans
-2 cans black beans
-2 cans diced tomatoes
-2 cans mexicorn (or you can use about a cup of frozen corn)
-1 small can green chiles (I use less than a whole can)
-1 package of taco seasoning (I make my own, but that's for another post)
-the cooked ground beef
-some jalepeños if you like

3. Simmer for an hour or so. Top with a little low fat sour cream or reduced fat cheese. Makes enough to freeze extra.

So don't drain the canned beans??? If you opted to, how much liquid would be substitute for the recipe? It's just that the liquids that the beans are stored in are EXTREMELY high in sodium. That's why I've always rinsed them first.

Hmm. Maybe 1/4 to 1/2 cup per "drained can." Pretty much eyeball it up. It's not an exact science.
