You're very welcome. I'm glad you liked it. I was considering making it, but two of the kids don't like dried fruit. We ended up having pav' instead.
I suppose I could've done it with berries - now that's an idea. (Lightbulb moment) come to think of it - some people have a stall at big public events here and sell what they call 'Berried Treasure'. It's the same creamy, cheesy mixture with blueberries or raspberries or both mixed through it. It is absolutely dreamy. They put a chocolate coin in the bottom of the cone or bowl they serve it in - hence the 'berried (buried) treasure'. Yay, the kids will think I'm the best mum ever now

2 x 250g cream cheese, softened (room temp.)
1/2 c brown sugar
1/2 tsp mixed spice
1 c cream
1 c sultanas
1/2 c chopped glace pineapple
1 c chopped dried apricots
1/2 c chopped glace cherries
2 tablespoons brandy
4 eggs, separated
Start beating cream cheese.
Add brown sugar, spice, cream, dried fruits, brandy and egg yolks.
Beat egg whites to soft peak.
Fold through cream cheese mix.
Pour into lined or lightly greased 20cm ring tin or pudding basin. Freeze overnight. To unmold, dip tin in hot water for a few seconds and invert onto a serving dish. Decorate with fresh berries.
Tip: For easy removal, line tin with plastic wrap.
We haven't made this yet, but will definately be trying it soon. I love the idea about the berries instead of the dried fruit Tas!! Good Idea girl!!

Made it today. It was goooooood Made half the mixture with fresh cherries, and half with mushed, previously frozen strawberries. Would've used blueberries, but can't get the bulk ones for a few weeks. I didn't put the lemon juice in and DD said she'd prefer it without anyway because she doesn't like cheesecake. If I was making it for myself I'd leave out the sugar. The fruit would be sweet enough for me, but with 1/2 c castor sugar it wasn't ultra-sweet. You could use artificial sweetener if you're into that.
