I'll try my best since I didn't follow a recipe but just went with the flow..
I used:
5 medium potatoes cut into small chunks or atleast in eighths (optional I used them because I wanted all the food groups in one)
2 cans of green beans
1 lb bag of great northern beans
1 lb bag of lima beans (you can do this if you want but its not mandatory I just wanted lima beans and its extra protein)
Leftover ham bone (ours still had loads of meat on it) and left over meat
Atleast 6 c of water (you may have to add more as it thickens or what not)
salt and pepper to season
I soaked the great northern and lima beans over night for 8 hours
This morning I put about 6 c of water in my crockpot with the beans (for smaller portions I suggest only using half the bag of lima/gn beans or one bag of 1 of them) with the ham bone and meat and 1 can of green beans let it cook for bout 6 hours. I noticed the crock pot was kinda too full to add anything else or the potatoes so I had to start another pot lol and so now I have two HUGE pots of bean soup but anyways I took bout 1/2 of what was in the crock pot out put it in the other pot on the stove with the potatoes added the other can of green beans and seasoned with salt and pepper for taste. The pot with the potatoes is a lil thicker but its yummy anyways..
Guess I should say it took bout 8 hours in the crock pot i had it on low for 4 hours of it. It only took the stove one bout 2 hours though.
I don't know the dietary exchanges but I can't imagine it being unhealthy. I picked the fat out of the ham before using the bone and stuff... I know it's loaded with protein though LOL.
