Default For those of you who like eggs..

I was at a church social a few weeks ago and the hostess put out egg balls! They are sooo rich and soo decadant so I figured I would snag the recipe:

1/2 dozen hardboiled eggs peels and chopped fine
2 tablespoons low fat mayo
a pinch of dry mustard
1/8 cup of grated red onion
1/2 cup of finely shredded cheese (I do cheddar)

Mix the eggs, mayo, mustard and onion together just enough so that the egg is moistened and will cling together, then using a tablespoon or a small icecream scoop form into balls and place on a tray in the fridge covered for about an hour or until thoroughly chilled.

After the balls are chilled remove from the fridge and roll in the shredded cheese until completely coated, then place back in the fridge to chill until you are ready to serve. Looks very pretty on a bed of leafy greens!

Variations:
add a few tablespoon of finely shopped bacon
or
finely chopped pimento
or
finely chopped olives

Makes about 2 dozen and is very low in carbs. High in fat though!

5. To cut the carbs waaaaay down and eat -balanced- meals
6. To not take out my frustrations on my poor hubby when there's no junk food in the house
7.To lose a total of 50 pounds in this challenge and to not get angry when I don't lose anything for a week
8. To be able to encourage others in their journey as well to the best of my abilities.
