Tomato-Poblano Salad Vinaigrette 1/3 cup cider vinegar
2 tablespoons tomato paste
2 tablespoons lime juice
1 3/4 teaspoons ~Tabasco Pepper Sauce
1/2 teaspoon chopped garlic
1/2 teaspoon salt
1 1/2 cups olive oil
1 medium tomato. blanched, skinned, seeded, diced
1 medium hot green chilli diced
1/2 teaspoon dried orgegano
freshly ground pepper In food processor blend vinegar, tomato paste, lime juice, tabasco sauce, garlic and salt for 30 seconds. with motor running gradually add oil
transfer mixture to a bowl
stir in tomato and chilli pepper
season with oregano and black pepper
transfer to a jar and keep in the fridge to spice up your salads! Makes salads or roasted vegetables a little more interesting and as a side benefit; spicy foods are supposed to speed your metabolism up a little!
