Totally O/T! I need some recipes for meals on a tight budget. HELP!
Hey All,
We're having some financial difficulties at the moment, and I need some ideas for cheap meals so we can stock up on food tomorrow before we run out of money for the month. Things that I can make and freeze for more than one meal would be great or meals that don't cost a lot to make would be awesome. Also, if you know of any websites for budget recipes, let me know those, too!
Spaghetti - times were tough when I was growing up, so mom would buy 1 jar of spaghetti sauce then add a big can of tomato sauce, a can of tomato paste (for thickening), some salt, and italian spices. Often she would cook a pound or half a pound of hamburger, drain it well, and put that in the sauce.
Stew - I'll check tonight to see if I still have mom's recipe for hamburger stew. It was actually pretty decent with hamburger, veggies, potatoes cut up really small.
Potatoes are often really inexpensive and can go a long way, depending on how they are cooked. My dad used to like to take a big pot and boil potato chunks, chunks of carrots, and close to the end some cabbage. You can eat this alone, or add polish sausage or kielbasa to it, but the fresh potatoes, carrots and cabbage will be really cheap and you can make a HUGE pot of it.
For future CONSIDER TRYING www.thegrocerygame.com. It is most likely in your area (you can easily find out). Basically the woman tracks the sales cycle and the coupons in the paper, then letting you know when items are at a "stockpile" price so you get the best deal. The first month costs $1. Items in green are free (I've gotten free pickles, mustard, brats, bread and tons of free yogurt), items in blue are at a stockpile price, items in black buy only if you need.

meatloaf - salteenes work just as good as bread crumbs, eggs, ground beef, bell peppers and onions(if desired) and a can of tomato paste and mashed potatos (about a $5 meal)
chili - a pound of ground beef, a pack of chili seasoning, kindney beans, tomato sauce and if ya want it spicy, add a can of jallepenos (about a $4 meal freezes well)
spaghetti - canned sauce is just as good as jared and it costs less with green beans(about a $4 meal)
chicken noodle soup - a whole chicken boiled, take all the meat off. Keep the water you boiled the chicken in, add celery, egg noodles, carrots, seasoning, green beans,and potatos if wanted. (about a $7 meal - but makes alot and you can freeze it too).
Fried chicken, mashed potatoes and something green (spinach, greenbeans, or mixed veggies)
baked chicken quarters, mac and cheese and green beans.
Theres always the trusty pork and beans.

i cant say noodles enough lol you can buy those little bag noodles all different flavors for 10-12 cents also boxes of noodles lol my mom used to just cook like some shell noodles or something (elbow etc) and throw in some cream of chicken or tomato soup....it sounds nasty but it tastes good and it will cost you less than $1 lmao but so far as a real meal the speg. chili etc are very good for freezing

Saren, I wish I had seen this sooner...I have a ton of budget recipes! I'll be back tomorrow w/ all the recipes as were just about to eat dinner... They will still be useful for next month!

Ok, here are some recipes that I have. I don't know how any of them are b/c I have never tried them before...I got them out of my recipe program. Next to each ingredient has the price of that item, you can adjust the prices as you know how much things are at your grocery store.
BBQ sandwiches
2 servings
1 lb ground turkey
1 can tomato soup--50 cents
1 small chopped onion--40 cents
Brown sugar
White Vinegar--50 cents (for the entire bottle)
Hamburger buns--75 cents (for the package)
Brown meat and onion. Add remaining ingredients and simmer. I just guess on the sugar and vinegar...maybe 1/4 cup of each to start, then adjust to taste. Serve on buns with salad or veggies.Assuming you have the brown sugar, you're looking at under 3 bucks for the sandwiches. They're pretty good, and not bad for you, as they're made with turkey instead of beef.
Basil & Herb Tomato Pasta
Makes 2 servings
Near East Basil & Herb boxed pasta--$1.50-$2.00
1 can tuna--33 cents
1 Large tomato--33 cents
1/4 cup sliced thin red onions--70 cents
2-3 cloves minced garlic--33 cents (whole garlic)
Olive oil
Water
Mix seasoning mix , tomato, water, and olive oil according to box directions, adding 1/4 cup sliced red onion. Make pasta. While pasta is cooking, saute tuna with a few slices of red onion and minced garlic cloves. Mix tuna with seasoning mix and toss with drained pasta.
Total Cost: $3.16-$3.66

1 can black beans
1 can diced tomatoes (something spicy)
Chopped onion to taste
Rice
Corn (optional)
Shredded reduced-fat cheddar cheese
Flour Tortillas
Cook black beans and rice (separate!). When both are finished, throw them in a larger pot and add tomatoes, onions, and corn. Cook over low-medium heat till warm throughout. Fill tortillas with mixture and add cheese!
Brown ground beef, drain. Then add a little bit of salsa and chili powder to taste (or one of those taco seasoning packets), simmer on low until reduced. Press 1 package biscuit dough into muffin tins. Spoon the beef mixture into the tins and top with a little shredded cheese. Bake at 400 for 10 minutes. Serve with sour cream.
I think it cost about $2 at most, including the 30 cent can of green beans I served on the side!
Chicken & Egg Noodles
Makes 6 servings
1 bag egg noodles--50 cents
3 Chicken breasts--$2.00
2 cans Cream of Mushroom soup--50 cents
2 cans Mushrooms--50 cents
1 cup milk
Cook Chicken. Cook noodles. Mix together & bake @ 350 for 25 mins.
Total cost...$4.75
You will have leftovers for days. Great for freezing.
4 cooked & cubed chicken breasts--$4.00
1 can Cream of Chicken Soup--60 cents
1 cup mayo--50 cents
2 cups cooked brown rice--50 cents
1 diced onion--40 cents
2 stalks diced celery--20 cents
1 tbsp butter--10 cents
1 tsp garlic powder
1/2 tsp black pepper
Topping:
Pepperage Farm Herb Stuffing Mix; prepared 4 serving portion with water--50 cents
1/2 cup slivered or sliced almonds--$1.00
Saute celery and onions in butter until translucent. Set aside to cool.
Combine mayo, soup, garlic powder, and pepper. Mix well. Add in chicken, rice, and sauteed vegetables. Pour into a large shallow casserole dish (I used a corning casserole that is maybe 9X12)
Top with stuffing and sprinkle almonds over the top.
Bake at 350 for 30 to 45 minutes. Casserole will get bubbly around sides when heated through.
I figure that it costs about $7.85 to make this casserole, but it will feed 6 - 8 people easily. It also freezes well, which makes it even more valued in our house!
Chicken Katsu
Makes 2 servings
3 Fried Chicken Fingers (they're big...from a Tyson freezer bag)-- whole bag has 14 fingers, cost = $8.00--$1.75
3/4 cup white rice--20 cents (uses 1/3 bag, whole bag is $.60)
1/2 lb fresh snow peas--$1.75
3 tbsp butter to taste
3 tbsp soy sauce to taste
3 tbsp teriyaki sauce to taste
Bake chicken fingers in oven w/ butter on top, cook rice for 20 minutes on low after boiling water. Steam green beans for 10 minutes on medium. Use soy sauce and terriyaki sauce for flavoring on rice.
Total cost for two (no leftovers) $4.70
