Default TTC - insulin effect on estrogen?

I've been following a low-carb diet on the advice of my Naturopath to help me regulate my cycles (DH and I are TTC). So far I've lost 16lbs and have noticed my CM is "wetter" than usual (sorry if tmi). So basically I've seen some decent progress.

However, for the past week and a half I've done some "cheating" on the diet, i.e. had some ice cream, some bread, rice, etc. (I'm not sure why I cheated, I just did ). The weird thing is that I noticed that as soon as my insulin levels rose due to the carbs I took in, my CM dried up and my cervix lowered down to non-fertile phase height (again, sorry if tmi).

So my question is this: Has anyone else noticed that they are so sensitive to insulin that a week of high insulin levels can lower your estrogen levels so much that your cycle stops?

I'm confused about this and wanted to see if anyone else has noticed this.
