I'm not a vegan or vegetarian, but I thought that maybe this web site might be helpful to you.

I'm a lacto-vegetarian, but eat fairly little dairy. I'm not sure what you're looking for, but my big problem is getting enough protein (my nutritionist says I'm supposed to have some protein every time I eat -- no eating just carbs.)

So: I live on humus, I put canned beans in everything (easy meal: salad with all your favorite fixings, plus 1/2 can of beans rinsed on top), if you have a decent grocery nearby, pre-marinated tofu (I know Whole Foods has it) and Temeh are both delicious and easier to use than buying normal tofu. Mushrooms are great, I love grilling portabellas, yum. Veggie burgers can be inexpensive, I like garden burgers and recently found a new veggie-whole grain garden burger that's very good, low-carb, and has a decent amount of protein.

I hope some of these ideas help. Low-carb diets can be difficult on a veg*n diet.

I found this website yesterday for low-carb veggie people: There is a woman on there (TaDa-I think is her username) that has lost 90lbs following a vegetarian version on Atkins.

http://forum.lowcarber.org/forumdisplay.php?f=109

I eat a ton of the mock-meats-some of the best brands are: Boca, Tofurkey, Morning Star and Litelife. They CAN be expensive, but I stock up when they are on sale.

I do eat free-range, hormone free, vegetarian fed eggs for protein

Beans are good too actually-they have a lot of fiber to help reduce the impact carbs.

Cottage cheese, tempeh, and cheese are all great sources of protein and can be inexpensive.

Best of luck
