I'm a lacto-vegetarian, but eat fairly little dairy. I'm not sure what you're looking for, but my big problem is getting enough protein (my nutritionist says I'm supposed to have some protein every time I eat -- no eating just carbs.)
So: I live on humus, I put canned beans in everything (easy meal: salad with all your favorite fixings, plus 1/2 can of beans rinsed on top), if you have a decent grocery nearby, pre-marinated tofu (I know Whole Foods has it) and Temeh are both delicious and easier to use than buying normal tofu. Mushrooms are great, I love grilling portabellas, yum. Veggie burgers can be inexpensive, I like garden burgers and recently found a new veggie-whole grain garden burger that's very good, low-carb, and has a decent amount of protein.
I hope some of these ideas help. Low-carb diets can be difficult on a veg*n diet.
