Default Vegetable Protien recipes (beans etc)

I am on a mission to reduce our meat consumption, problem is, I dont know where to start. If anyone has any good recipes that they would like to share I would appreciate it.

I'm a vegetarian and although DH eats meat, we cook a lot of meat-free meals. I'm a big fan of allrecipes.com, which is where I got this one. This soup is excellent served with cheese quesadillas or with a good Mexican cornbread.

Black Bean & Salsa Soup

INGREDIENTS
2 (15 ounce) cans black beans, drained and rinsed
1 1/2 cups vegetable broth
1 cup chunky salsa
1 teaspoon ground cumin
4 tablespoons sour cream
2 tablespoons thinly sliced green onion

DIRECTIONS
In an electric food processor or blender, combine beans, broth, salsa, and cumin.
Blend until fairly smooth. Heat the bean mixture in a saucepan over medium heat until thoroughly heated. Ladle soup into 4 individual bowls, and top each bowl with 1 tablespoon of the sour cream and 1/2 tablespoon green onion.

Tortilla Pie

INGREDIENTS
2 (15 ounce) cans pinto beans, drained and rinsed
1 cup salsa, divided
2 cloves garlic, minced
2 tablespoons chopped fresh cilantro
1 (15 ounce) can black beans, rinsed and drained
1/2 cup chopped tomatoes
7 (8 inch) flour tortillas
2 cups shredded reduced-fat Cheddar cheese
1 cup salsa
1/2 cup sour cream

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, mash pinto beans. Stir in 3/4 cup salsa and garlic.
In a separate bowl, mix together 1/4 cup salsa, cilantro, black beans and tomatoes.
Place 1 tortilla in a pie plate or tart dish. Spread 3/4 cup pinto bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese, and cover with another tortilla. Spread with 2/3 cup black bean mixture, and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla, and spread with remaining pinto bean mixture and cheese.
Cover with foil, and bake in preheated oven for about 40 minutes. Cut into wedges, and serve with salsa and sour cream.

There are lots of great meat substitues out there. I buy Morningstar hot dogs and corn dogs, Boca Burgers, crumbles, bacon, and sausage. You can get protein from potatoes, too. I've never been a big fan of tofu blocks. I'm afraid them because I don't know how to prepare them.

There is a magazine called Clean Eating, it has a lot of good recipes (some with meat but you could just omit)

Thanks for the ideas. I dont want to completely cut out meat, just reduce the amount we eat. I kinda have to trick DH into it though LOL. Im going to try that black bean soup tomorrow.

The recipe calls for the beans to all be pureed in a processor, but we always leave one can of beans whole to add texture. The spices and salsa really make the soup tasty. Hope you enjoy it.

A lot of people do Meatless Mondays if they don't want to cut out all meat.
