I have been a vegetarian for about a year. My gyno told me to keep it up, especially since I have high cholesterol, but to cut back on processed grains and starchy vegetables. So I eat mostly brown rice rather than white, fewer potatoes, things like that. I also don't eat too much fruit due to the high amount of natural sugar. My gyno also recommended the book The Schwartzbein Principle to me, and there is a vegetarian cookbook for it. I am not diabetic and only very slightly insulin resistant, but I feel very healthy eating like this and I have lost about 20 pounds. |
