I don't know if you guys read VT or if any of you are concerned with your meat intake in general (I'm trying to low carb, but also keep meat at a minimum). My philosophy is, it's not ecologically sustainable for all of us to follow the Atkin's diet - if everyone in the world ate 6 servings of meat a day, it would be disastrous!
But anyway, I'm not trying to preach at anyone - seriously. You have to do what's right for you, especially given your health concerns.
BUT, for me, long-term, I would like to learn how to low-carb (more like Zone than Atkins) AND eat whole foods AND eat Vegetarian.
The Vegetarian Times' recipes are generally way too high carb for me. There was a blurb about three months ago about Syndrome X - just a short section that doctors are realizing what it is.
Well, I thought about writing to them and asking them to do a whole issue/ or at least a section in their issue/ on PCOS, Metabolic Syndrome or Syndrome X? What do you think? I was thinking, Erin3, and others - we could contribute some of our recipes from here? If nothing else, it'll raise awareness, if they decide to do it.
I'm going to write them a letter, but I thought I'd ask here - if you want to help me write this letter/have my include your own comments or maybe contribute your recipes, please PM me... It would be fabulous if we got some of the great Veggie chefs to start thinking about their carb content!!!
