Red face Vegetarians & Low-carbing.Need help!

Hello!
Sorry didn't know where to post this thread. Just wondered if anyone could help me.I've done enough research to know that I need to change my diet.What better time is there than new year?!

Problem is,i'm finding it hard to come up with any low-carb,vegetarian/easy to make/PCOS-friendly ideas. I work full-time and live alone so don't really have much time to be preparing food all evening. I do,however want to be able to eat healthy & exciting food. My diet is mostly carbs at the moment.I don't even eat a proper dinner.I usually just have a sandwich when i get home.I'm on a bit of a tight budget.Need easy ideas which don't cost the earth..........as i'll just be making them for me not a family *sob* lol

I think i could probably control my diet at home,the problem is at work.I get hungry pretty quickly and don't feel better until i have a chocolate bar or something.I need something that i can take in for lunch and some mid-morning/afternoon snack ideas.

Sorry i know i don't want much hehehe.Maddy i've read a few of yours but i just can't see them filling me up.What usually happens is i cook something healthy then i'll be starving hungry an hour later so ill make a sandwich or toast.I need something to help me break this cycle.Thanks for any help xxxxx

I'm a frustrated low-carbing vegetarian too, but I can share what's helped. I got a bread machine, so now I make all my own bread w/stone ground whole wheat and flax seed, very little sugar, it's so much cheaper and healthier than buying bread. For breakfast, I have a piece of that toasted with soy cheese on it and some fruit. For snacks, (I try to eat 4-5 times a day), I often have dried apricotts. When I buy a bag, I measure it out into servings in little ziplock bags.

edited to add a lunch idea: I make a big pot of veggie / low-carb soup (I use beans, barley, veggies) every week or two, sometimes I take that. I also take leftovers. If you need foods that don't need to be reheated, roll up a slice of cheese, a leaf of romaine lettuce, and a tomato slice with some mustard on it. A couple of those isn't a bad lunch.

Hey,

I am a veggeterian trying my version of the south beach diet -- only protein :-(

Breakfast is primarily light yogurt. Lunch is salad and with soup and salad. or some stir fry veggies. Cook tofu in different styles - american, chineese, indian.

10-12 almonds a day is a fav snack. Fat free Stringcheese is a good snack that can be had on the go. Always keep 2-3 in my bag. Helps me visiting the vending machine @ work.

the lettuce with cheese and mustard sounds interesting. Sure gonna try that.

Have a terrible sweet tooth. Make a flowing mixture of fat free ricotta cheese + skim milk - any consistency u like with a sachet of equal and some ground almonds. Fills u up and and is extremely protein oriented.
