I had a wild rice blend to which I added mushrooms and garlic. DH cooked the rice according to directions, and I sauteed the mushrooms and garlic in olive oil right after the rice finished cooking. Then I added the two together.
I think it would be better with chicken too, but I was too lazy to add it. Still it's pretty good.
I made turkey chili, All I do is brown a pound of ground turkey in olive oil, then add some barbeque seasoning, and mix it with a big can of tomato sauce a can of tomato soup, a can of kidney beans, and some chli powder, and about 2 tblsp of brown sugar. It is also good made with lean ground beef!
That wild rice sounds good too!
We had pork chops, green beans, and cream corn. DH does all the cooking. He powdered the chops with Chicken and Rib seasoning and fried them in a pan. We put butter, salt and pepper in the corn. MMM! I'm still eating!
I had steamed broccoli, I hate when DH is gone! LOL

I made hawaiian chicken and asparagus.
Hawaiian chicken is just boneless skinless chicken breast fried and then topped with thin ham slices, a pineapple ring and shredded mozzarella cheese. You cover it with foil or put a lid on the pan to heat and melt the toppings. Its very good. You can use lowfat cheese and turkey ham to make it with less fat. I was thinking it would be good to dip it in BBQ sauce as you eat, but BBQ sauce is sugary usually, so...
__________________ New Year's fitness Celebration: In 2006 I cycled approximately 1800miles, hiked up 4 mountains, took a walking tour of San Francisco, hiked in 4 california national parks, swam in a pool with palm trees on my birthday, hiked and biked along the Oregon Coast, climbed to numerous breathtaking waterfalls, explored a gold mine, a silver mine and a cinnabar mine, and walked a fantastic loop along frozen streams and icecicle waterfalls at Opal Creek in winter.
2 chicken patty sandwiches, the bread was whole-wheat, sugar free. A salad for a starter with blue cheese dressing. It was okay. We were both just beat today, so we didn't cook like normal.
I cooked a pork and veggie stir fry. Little bit of diced pork lightly fired in extra virgin olive oil. Added pak choi, mange tout and beansprouts. Served with noodles!
I cook just for myself during the week as BF doesnt get home till gone 9pm!

We had salmon, macc and cheese and veggies.
Poured olive oil on the salmon, sprinkled salt/pepper, oregano, and a little thyme on it then put crushed garlic on top. Cooked in oven.
Sauteed onions in olive oil added fresh zuccinni/squash, fresh mushrooms, a little italian seasoning, towards the end added fresh tomato then a splash of white wine, cooked till done.
Cooked wheat pasta, added milk and sharp cheddar, salt/pepper, then made maccaroni and cheese.
Sooo good.

I made red lentil and carrot soup, with pasta shapes. Sounds awful - it was actually quite nice. My mil bought me a new recipee book last week............
We did a roasted chicken (baked) with rosemary, parsley, garlic and s/p. Made brown rice as a side (boiled in beef broth) and added a little Promise spread so it was a buttery nut flavor. YUM YUM YUM. Leftovers tonight

Wow, all that sounds wonderful. I'm taking notes. You know, I'd never thought of making macaroni and cheese with whole wheat pasta-- I'd kind of figured I just couldn't have it anymore, which is a shame because I like it a lot. It seems so obvious, especially since I've had macaroni and cheese style cous cous!
Tonight's adventures in weeknight cooking, DH and I attempted to make a Spinach Frittata.
I sauteed onions, garlic, mushrooms, spinach, and snow-peas in olive oil. Then put them in a little "non-stick" pan. Then covered with cheese. Then DH was supposed to pour 4 beaten eggs over the top, but he went a little overboard and at least one of those eggs ended up on the burner, so the eggs didn't quite cover the vegetable-cheese mixture (and the kitchen didn't smell so good for a while). Clapped the lid on, turned the heat to "low" and cooked until it was solid on the top. Then tried to get it out of the pan, but it stuck, and the eggs hadn't really reached the entire bottom on one side so we ended up with sort of a vegetable mixture with scrambled eggs-- sort of. It was still quite delicious...and probably better for us with the higher vegetation to egg ratio. (In our defense we were both working late tonight and got drenched to and from work.)
We had hamburgers, baked potatoe casserole, and ranch style beans.
I used a mariante pack for the hamburgers, bF cokked them.
The baked potatoe casserole was so easy....buy a frozen bag of hashed browns, add butter, sour cream, cheese, and chives. Mix it around a bit, bake uncovered at 350 for 35 minutes.
