I've had this patch in my back yard since we bought the house and just figured out what it is this summer! I have a lot of it and have no idea how to cook it. I am watching my waistline so no pie for me Anyone have any ideas or recipes? They would be most appreciated

Rhubarb is delicious but I've never dared try a sugar-free recipe...that stuff is majorly sour. I make rhubarb crisp now and then.
You may have to donate some to neighbors and family. You can also cut it in 1/2 inch pieces and bag it in quart bags, then freeze. Then if you decide to splurge on pie or crisp, you can take out just one bag. It stays good in the freezer for months.
I've never tried to do it sugar-free either. I steamed some without the sugar and fed it to DS. He really liked it, but then he really likes sour foods.
You can make a strawberry rhubarb pie, or a rhubarb compote to serve over vanilla ice cream.
It freezes beautifully, so dice it and freeze it in portions. Then make this drink, which doesn't seem to be super sweet, and has no refined sugar.
Rhubarb Refresher
3 cups chopped rhubarb
3 cups water
2 tablespoons honey
1 cinnamon stick
1 to 3 tablespoons lemon juice
Mint or lavender sprigs - optional
Place rhubarb, water, honey and the cinnamon stick in a large pot. Bring to boil.
Let simmer for 15 minutes. After 10 minutes, take out the cinnamon stick. Remove from heat and let steep for 1 hour.
Pour through a fine strainer without squeezing, which will make it become cloudy. Refrigerate for 2 hours before tasting. Add the lemon juice to taste, and the sprigs, if you like.
Thanks you ladies I'm going to try the compote and the drink. I took a bunch around to my neighbors this morning and we are all going to try each others creations!

We always had a rhubarb patch growing up. I love it!
I would imagine that you could use splenda or stevia instead of sugar to sweeten it. It is most popular around my house when served as "rhubarb and custard." Just cut it into pieces and stew it with sugar until it's really soft. You might need to add a bit of water. Serve it over warm custard (like the Bird brand kind). There's something about the creamy sweet custard and that tart rhubarb that is soooo good.
My Mom also makes a rhubarb and blueberry crisp in the crockpot. It's super yummy too.

the other day i cooked some rhubarb. Decided to do it sugar free. But i used sweetener........... NOT a good idea. My hubby and I were running to the loo. Just like Metformin Revenge. lesson learnt

When I was younger I used to eat it raw dipped in sugar. I still can't eat it any other way! I don't like the texture of it when its cooked, it's still pretty sour even with the sugan but it's really good.

My grandma grew it in her garden. She would make Rhubarb sauce like applesauce. Just remember not to eat the leaves, she always told me they were poisinous (sp?). Strawberry/Rhubarb pie is great too.
