Default What do you do with spinach?!

I've run into a cylce of how I utilize spinach and hope you ladies have some new ideas! I add it into all of my pasta dishes becuase its super yummy and it gives a really nice splash of color to a drab looking meal. But how else do you guys make it? I've steamed it a couple times and thrown it on the side of a chicken-based meal in the past just to add something else to the table, but I was the only one who touched it! Any tips are appreciated, thanks in advance ladies!!

I like a spinach and potato frittata. Infact a spinach and almost anything frittata would be good!
Or spinach and feta filo pastry parcels.

We buy baby spinich and put it on sandwiches and in salads. It's about the only green veggie DH will eat.

Saute it with a little garlic and olive oil. Or for creamed spinach add a little milk/half and half and parmesan cheese.

It is great in Turtle Soup too! (in New Orleans turtle meat is used usually along with veal and beef, other places tend to leave out the turtle meat as it is impossible to find). This soup is a meaty broth soup that has lots of sherry, spinach, mushrooms, boiled eggs, and some other stuff. I highly recommend trying it if you happen to find a restaurant that serves it or make it at home. Here is the recipe http://www.sptimes.com/2005/04/27/Ta...lease_do.shtml. Just sub half veal half beef for the turtle meat.

Good on sandwiches, and I second with garlic and olive oil sauteed in a pan- add some red pepper flakes to make it even better. Also look up Palak Paneer which is great too.

I eat 4-5 bags of baby spinach a week just as salad. Lettuce upsets my stomach (thanks Met) but spinach is fine. I add grapes, shredded chicken and carrots, and a bit of parm cheese and have one every day for lunch. The only downside is that it's about 5 bucks a bag.

This is a fruit salad with spinach,apples,oranges,walnuts,and cranberries mix it all together and then add some poppy seed dressing to it. It might sound like a "weird" recipe but it is delicious, that's the only way we eat spinach.

HSG and Laparoscopy in July!
HSG shows i have Unicornuate uterus (birth defect) which means i only have half a Uterus (right side) two Ovaries and one Fallopian tube.
Laparascopy was a success my one tube is not blocked and very little Endometriosis.

A local restaurant here serves a similar spinach salad I have started making at home. They use dried cranberries, bacon, boiled egg, and almonds with poppy seed dressing. Very yummy!

For a low carb lunch, I make lean burgers either with turkey or lean ground beef. When I take a burger to lunch, I put A LOT of spinach in the bottom of a bowl and put the burger on top. When I warm it in the microwave I will put a slice of low fat cheese over the top. The cheese melts and the spinach wilts. Very good!

i love it sauteed with a tad bit of EVOO and freshly minced garlic. it's also great sauteed with some shrimp, EVOO, white wine or lemon, and garlic. i throw it in all my wraps, or on pizza with whole wheat crust from trader joe's, EVOO, basil, reduced fat cheese, and roma tomatoes. HTH.
