Here is a dish my Mom used to make all the time that I LOVE!

Mix one box of shredded spinach, 1 egg, lemon juice (to taste...start with a tablespoon), and bit of salt and pepper, and crumbled feta cheese (again to taste/portion control).

Take a large spoonful and put into the middle of a tilapia fillet. Roll the ends of the fillet around the spinach mixture, stand it up on end, and put into a sprayed baking dish. Sprinkle with dill. This works best if you make several at a time, and lean them against each other in the baking dish. Cover, and cook for about 20 min at 350* (Shorter time/lower temp with a gas oven).

These are delish, and really good when served with fresh lemon slices to squeeze over the top!

I put it in lasagna(in the ricotta part)
I eat it raw
I steam it(prefer over canned)
I saute it with a little Olive oil garlic, or sometimes with a tablespoon of crushed walnuts and rasberries then drizzle rasberry vinagarette(that was a big hit in my house)

Another good thing to do is make an omelet or quiche with egg beaters. You can add Spinach, tomatoes, onion, bell peppers (other peppers if you want to spice it up!) just about anything. One of my FAVORITES is Spinach and Salmon Quiche. It is AMAZING add fresh asparagus too!

I put baby spinach leaves in wraps, as well as alfalfa and garden veggie cream cheese. Yum!

I found a recipe on kraft foods and it was quite good. I can't post URL's yet, but if you search their site for "spinach stuffed chicken for two". You can find it there.

I subbed fat free italian dressing and whole wheat stove top stuffing. I would definitely make it again - actually DH made it the last time.

Also like putting spinach in the egg beaters or omelets. I never think to use it on my sandwiches at home, but always add spinach when we go to Subway.

Ooh, spinach salad with strawberries, toasted walnuts, and a good vinaigrette. The kind with the bacon and poppy seeds is awesome. Litehouse spinach salad dressing I think it's called. Dangit, now I'm craving that.

My MIL makes Spinach Quesadia's in a skillet on stove top.
She just makes a small amount of hamburger with some taco seasoning puts it on whole wheat tortilla, tops with frozen thrawed & drained spinach & cheese, puts the other whole wheat tortila on top of that, browns the bottom, flips it to brown the other side and serves with rice -- its yummmy

Put about a Tablespoon of broth in a pan, then add a bunch of spinach. Top with a white fish fillet that has been seasoned with salt, pepper, and lemon. Put a lid on the pan, and let it cook about 5-10 minutes, depending on how thick the fish is. The whole things steams up and you'll have the juiciest, most succulent fish ever sitting on a bed of tasty spinach.

Everyone else has great ideas too - about the only thing I could add is that sometimes, I eat the spinach straight out of the bag. For more flavor I'll add a little balsamic vinegar or lemon juice and shake it up. But then you have to eat it quick or else the acids will "cook it" if you leave them too long. Sometimes I do this when I want a "mindless" TV food (not a good habit, but every now and then you want to munch, ya know?) instead of popcorn.

I like to add fresh raw spinach to my fruit smoothies. I also put kale in them. Adds extra nutrients, but doesn't really change the flavor of the fruit smoothie.

There are some good ideas here that I will have to try...
I usually make a crustless quiche with spinach, onions, eggs, cheese, and some whole wheat bread crumbs. It takes DH and I couple days to get through it, but we look forward to eating it day after day.

I like to sautee the spinach with olive oil garlic and other veggies - like asparagus, portabello mushrooms, and cherry tomatoes.

I try and throw it into most dishes, just a little handful, whether it's pasta or chilli or salad.

For a treat though and I know this is a little bit naughty I wilt a whole bag in pan with garlic and onion then add a little bit of single cream or soya cream then liquify it and use it as a pasta sauce with some wholemeal pasta. It's a good way to get a whole lot of spinach in a meal.
