Ok ladies I'm starting this new thread because I think it's neat to see what everyone does for dinner. Maybe I'm a weirdo but it's just one of those things I think about. I think it will be especially useful for those of us on specific diets, because we can see what our cysters are making and hopefully exchange some ideas for dinner.
For me, tonight I'm making spaghetti. We bought Newman's Own Italian Sausage sauce and I added a bunch of stuff to it (tomato paste, diced tomatoes, hamburger, Lea & Perrins, seasonings, onion, etc.). Man is it good. In fact it's so good that I think I have third degree burns on my tongue from hovering over the pot and "sampling."
Left over Fried Rice for us. Not sure I really want it but I don't really feel like making anything.

I think DH is making whole wheat pizza. Most weeknds we don't eat supper. Tomorrow night we might have breakfast for supper: eggs, toast and sugar free bacon.
I wish I could get my DBF to eat leftovers. He likes leftover chili and spaghetti-that's it. He fries the spaghetti in a pan the next day and makes it crispy (strange but actually good). If I don't make dinner then he comes home from work and shuffles around in the kitchen-he goes back and forth between the pantry and the fridge. Very annoying. I try to tell him maybe I would cook more if he would help me clean up more. LOL I don't think he's gotten the point yet.
DH hates leftovers, also. He grew up on them as I did, but he has rebelled against them now, lol. I rarely cook enough for 2 days because I know it will be just left for me to eat.
We're having soup that I froze a while back when I made a huge batch. It's cold and wet here today, perfect for a hot bowl of soup. DH is warming it up as I type this

Kind of a 'fusion' dish tonight : a 'stir-fry' (using water instead of oil) of skinless chicken breast pieces, zucchini and onion with a non-fat yoghurt and Thai red curry paste sauce poured over broken whole wheat lasagne noodles. Sounds weird, but tastes OK.

great idea! I love seeing what others are eating, I get new ideas that way! Tonight we're having oven baked chicken tenders (homemade) with (fat-free) cheddar brocoli rice, and either salad or green beans. Fresh strawberries will be dessert!

Chickpea and Lentil Soup - lentils, chickpeas, stewed tomatoes, cauliflower, carrot, onion, olive oil, ginger, cinnamon, salt and black pepper - and water, of course.

Last night we had chili, as is my lunch sitting here next to me. Tonight I think it may be more leftovers, or this Russia Chicken Pasta stuff we got from Trader Joes and it's really really good!
Cheesy omlettes for tonight.
I ate one bowl of raisin bran yesterday and my bs is still a bit high. Going with the all protein dinner tonight!

Well I had leftover spaghetti for lunch, but I'm trying to decide what to do. I have a pack of chicken in the fridge but I think I'll save that for tomorrow.
Man I'm drooling over that broccoli and cheese rice...
