what's for dinner? I originally posted this on the diet & exercise board, but I guess it should be here...
I've found lots of great meal ideas here, and I'd like to share one with y'all!
1 package firm tofu cut into 1" cubes
1 tbsp chopped garlic
2 tsp ground ginger
1/2 med. onion, diced
2 c. fresh green beans
1/2 c. chopped celery
1 small jalapeno pepper, diced (optional)
1 c. fat free chicken broth
1 tbsp cornstarch
2 tbsp sesame oil
Heat 1 tbsp oil in skillet, add onion, garlic and ginger. Cook on med-high heat until onion begins to soften, and add tofu cubes. Let cook (approx. 15 mins) stirring occasionaly until tofu is brown on outside, then set mixture aside in a bowl. In the same skillet, add remaining oil, green beans, celery, jalapeno pepper, and stir-fry 5 mins or until celery begins to soften. Meanwhile, mix chicken broth and cornstarch, stirring well so there are no clumps. Add tofu and broth/cornstarch to skillet. Cover, reduce heat and let simmer for 5-7 minutes until beans are cooked through.
Pretty tasty if I do say so myself! I'm experimenting with low-carb options, and that's what I had in the fridge...
