I make sweet potato fries by spraying a cookie sheet with no stick spray, cutting up my sweet potato fries, lightly spraying again, and baking at 375 for about 30 minutes, or longer if I want them kind of burnt at the ends. Sprinkle with a little salt- I can make a meal of just them. Tonight we had fried catfish and spicy boiled shrimp down here in Loosy-ana.

Thanks for the sweet potato tips. I haven't seen any pre-cut ones yet in Canada but making them is easy enough.

Tonight I'm making the meatballs from this recipe (with a few changes) and having them with whole wheat spaghetti and jar sauce.

I had baked salmon w/ lemon zest, lemon juice, cracked black pepper & olive oil, boiled new potatoes, and leftover stir-fry veggies last night.

Have you tried the Dreamfields Pasta yet? It's low carb and high fiber. I like it better than whole wheat!

No, I haven't tried that. We actually have gotten used to whole wheat. I think DH has bought durum wheat products before, though.

I love the taste of Dreamfields. My only complaint is that it doesn't hold up well for leftovers. And I LOVE pasta leftovers.

We never end up eating pasta leftovers, lol. DH was forced to eat it a lot as a kid, so he balks at it now.

Tonight we had naked chicken strips (chkn breast strips seasoned w/ dijon mustard, black pepper, poultry seasoning, and a dash of seasoning salt. I made zucchini and carrot fries baked in the oven (cut the veggies in strips, seasoned with salt & pepper, and baked @ 400 on cookie sheet sprayed w/ non-stick stuff), green peas, new potatoes, and strawberries.

Tonight we are having burgers and sweet potato fries. I need to go through the freezer and plan something for tomorrow night.
