Default This one's really good - and very easy!!!

Pecan Pie
Ingredients
3 egg whites
¾ cup caster sugar
22 Jatz (crushed)
70g pecan nuts (chopped)

Method
Beat egg whites until stiff.
Add caster sugar to egg whites and beat until sugar dissolves. Fold in Jatz and pecans.
Bake in moderate oven for 30minutes.
Top with whipped cream, crumbled flake and kiwifruit

Orange Block Cake
Ingredients
120g butter
120g sugar
2 eggs
1 ½ cups SR flour
1 dst sp orange rind
½ cup orange juice

Icing ingredients
1 cup icing sugar
1 dst sp butter
Orange juice

Method
Cream butter and sugar.
Add eggs one at a time, beat well after each addition.
Add orange rind.
Lastly fold in flour and orange juice alternately.
Place in well greased, floured block cake tin.
Bake for 35-40min in moderate oven.
When cool, ice with orange icing and decorate with rind.

Jam Drops
Ingredients
4oz butter
4oz sugar
8oz flour
1 dst sp custard powder
1 tsp baking powder
1 egg
Jam

Method
Cream butter and sugar. Add egg and beat until thick and creamy.
Sift flour and powder.
Stir into mixture to make fairly stiff dough.
Roll mixture into balls, make a hollow in the centre with the end of a wooden spoon.
Place a small amount of jam in the centre of each biscuit.
Cook in a medium oven for 10-15 minutes.

Not really a "recipe" but sooo good!
Give your 70% or 85% cocoa Lindt chocky a low carbing boost!!!
Melt your block over a double boiler of water to melt it (or zap in the microwave if you're into that). Add some cinnamon to taste and some raw or dry roasted crushed nut pieces like macadamia or almond. Pour into chocolate moulds to set, or into a shallow slice pan and break/cut into pieces when cooled.
Mmm, very yummy.

Turkey Rissoles (REALLY yummy!)

500mg Turkey Mince
1/2 block of Goats Milk Feta Cheese, Crumbled
1/2 Box Frozen Spinach (the chopped already kind)

Mix together and then cook in a frypan (or on the BBQ). So easy, can double very easily to make a bigger quantity.

Great for nibbles at parties or as a bigger rissole for a main meal.

Zuchinni Slice (Vegetarian, Gluten and Dairy Free)

375gms Zuchinni, coarsely grated (2-3 medium sized)
1 onion, grated
1/2 cup Goats Milk Feta, crumbled (can put in more to make it creamier)
1/2 cup Cornflour
1/2 cup oil
7 Eggs, lightly beaten
Salt and Pepper

Place all ingredients into a bowl and mix. Put mixture into ovenproof dish and bake in moderate oven for 30-40mins. It is cooked when set and maybe slightly browned but not necessary.

If you are ok with meat and want a bit of variety, add a bit of diced ham (maybe 100gms).

I love normal Zuchinni slice with flour and grated cheese in it, but this one is so much creamier and moist compared to the normal one. Definitely YUMMO!

LOL that's okay Mandi - I'm pretty used to adapting things these days. I've heard goats fetta is pretty yummy, although I haven't been able to get it because goats milk is seasonal and just about impossible to get over winter.

I came across a really sensational marinade the other week. It is

1/4 cup golden syrup
2 tblsp seeded mustard
dash of oil
lemon juice

Mix together and brush over chicken. You can marinade it or just brush and bake. It is sensational - and the lemon in it makes the chicken melt in your mouth if you marinate it. Bon Apetite!
