Hey -
Try to google glycemic index. The lower the index the better. Here are things that I try to take to lunch, but I do eat a moderate amount of carbs just the good whole grain kind.

hummus with celery, broccoli, cauliflower
p.b. between 2 slices of whole grain bread
string cheese
plain yogurt with berries and a handful of nuts
nuts
frozen meals from trader joes, like the chicken masala or the canneloni (surprising amoung of protein in that)
bean and cheese burrito (check the carb, protein ratio)
luncheon meat with veggies on a tortilla
hard boiled eggs

That's all I can think of right now, but I'll keep brainstorming. Basically I stay away from anything white (sugar, flour, potatoes, the like).
Cheers.
Emily

Wheat: pizza, bagels, cookies (I use Splenda not sugar), cereal (Wal-Mart has a whole wheat, no sugar cereal), loaf bread

Oatmeal

Veggies: sweet potatoes, cucumbers, tomatoes, lettuce, squash

Meats are naturally low carb.

Dukes is a low-crab, high fat mayo and it tastes good!

If you start checking labels for sugars/corn syrups and flours that don't have the word "whole" in front of them (wheat instead of whole wheat) and just don't buy those products, you're doing really well.

Sweet potoates elevate the blood sugar less than regular potatoes. I eat them with butter and Splenda Some restaurants now offer them as a low-carb option. Some put brown sugar on them, so be careful when ordering them out somewhere. When I make them at home, I bake them pretty much like I did regular potatoes.
